Salted Caramel Chocolates, THM S, SF, GF, Keto

Christmas is just around the corner and who doesn’t like candy? Where we live there is a local candy factory that has wonderful chocolates but they are loaded with sugar! These Salted Caramel Chocolates are just perfect and best of all they are sugar-free.

Lily’s Chocolates are sweetened with Stevia and have a wonderful taste. The milk chocolates are the best but they also have quite a number of flavors such as Mint, Butterscotch, Salted Caramel, Dark, and Seasonal flavors like Pumpkin Spice. These chocolate chips can be found at most large super-marts, Walmart, and on Amazon.

Salted Caramel Chocolates, THM S, SF, GF, Keto

  • Caramel:
  • 1/2 cup butter
  • 1 cup heavy whipping cream
  • 2 tablespoons Brown Sugar Sweetener Substitute or Gentle Sweet
  • 1/8 teaspoons Olive Nation Brown Sugar Extract
  • 1/4 teaspoon vanilla
  • Chocolate Coating:
  • 1 bag, 7 ounces Lily’s Milk Chocolate Chips
  • coarse pretzel salt
  • Caramel: In a 1 quart sauce pan over medium heat, melt the butter. Continue cooking the butter over medium heat until it turns golden brown. Heat the cream slightly (you dont want it ice cold from the fridge). Add to the saucepan along with the sweetener. Reduce heat until low and simmer for 5-6 minutes or until the caramel is reduce to half. Add the extracts. Stir well. You will see small brown flecks in it but that is ok. It is from the butter being browned. Pour the prepared caramel into molds. Refrigerate until set. Pop each caramel out of the mold. I return them to the fridge to stay firm while I prepare the chocolate. Chocolate Coating: melt the chocolate chips in the microwave in 15 second intervals or use a Wilton Melting Pot for chocolate. Stirring between each time. Dip each caramel in the chocolate. Place on a parchment covered sheet to harden. Sprinkle with coarse pretzel salt while the chocolate is still soft. 34 candies.

You will see brown specks in the caramel from browning the butter. This is ok…browning the butter is what gives the caramel such a great flavor.

In a 1 quart sauce pan over medium heat, melt the butter. Continue cooking the butter over medium heat until it turns golden brown.

Reduce heat until low and simmer for 5-6 minutes or until the caramel is reduce to half. Add the extracts. Stir well. You will see small brown flecks in it but that is ok. It is from the butter being browned.

Pop each caramel out of the mold. I place them on a plate and keep them in the fridge while I prepare the chocolate for coating. These caramels don’t look as clear from being in the fridge.

  1. Only 2 Tablespoons of brown sugar sweetener? I have never seen such a low amount of sweetener. Just checking before I make it!

  2. Could this recipe be made with the actual sugars? No one in my immediate household has issues with sugar, but I do have people who are in my life 🙂 so being able to make it with sugar for those who CAN have it would be nice 😉
