Strawberry Pie THM-S

Nothing says summer like a freshly picked, sun-kissed strawberry. As a young teen I spent many hours picking strawberries for produce stand. Strawberries are the first berries to ripen followed by raspberries a few week later. This strawberry pie is a makeover of an old family favorite. It pie never last long at our house and I am sure it won’t at yours either. My regular recipe asked for strawberry Jello but I have substituted Strawberry Kool Aid and unflavored gelatin to be able to make it sugar-free.

1 cup of strawberries had only 49 calories and is rich in Vitamin C, fiber, and potassium. My garden plot has always had room for strawberry bed. They are very easy to grow and take very little maintenance besides weeding and fertilizer. I prefer to use glass pie pans but this time I used an old metal pie pan that was my mother’s. It has a very well used look and I really wonder how many pies were baked in it over the years. My Ninja Food Processor does a great job mixing pie crust and I wouldn’t want to do without it.

I have a Kitchen Aid Mixer just like this for 28 years already. It still works great.

I use this Kool-Aid since it does not have maltodextrin in it. But you can use strawberry extract, too.

Strawberry Pie THM-S

Ingredients

  • Pie Crust:
  • 3/4 cup THM Baking Blend
  • 1/3 cup oat flour not fiber
  • 1/2 teaspoon salt
  • 1/3 cup butter
  • 1 large egg beaten
  • Glaze:
  • 1 ½ cups water
  • 1 tablespoon gelatin
  • ½ pack strawberry Kool-Aid
  • ¼ cup THM Gentle Sweet
  • 2 quarts strawberries
  • Cream Cheese Layer:
  • 4 ounces cream cheese
  • 2 tablespoons THM Gentle Sweet
  • ½ teaspoon vanilla
  • 2/3 cup heavy cream

Instructions

  1. Crust: In food processor bowl, combine Baking Blenda, oat flour, salt and butter. Pulse a few times until crumbly. Add beaten egg. Pulse a few times until combined. Pat crust into 9 inch greased pie plate. Bake at 350*degrees for 10-12 minutes. Cool. Strawberry layer: Softened gelatin in ½ cup cold water for 5 minutes. Heat until syrupy. Add Kool-Aid, remaining cup of water, and Gentle Sweet. Cool until starting to thickened. Add strawberries. Set aside. Whip cream cheese until fluffy. Add Gentle Sweet, vanilla, and cream. Whip until fluffy. Spread on the bottom of a baked pie shell. Spoon berries and jello over top of cream cheese. Refrigerate until set. Garnish with whipped cream and fresh berries. Serves 8.

    Thanks for the recipe! I’ll be making it just as soon as I can but ONE packet of Kool Aide (we stopped buying it over 25 years ago). That way the younger children won’t begin drinking my stash! (We have 13 children with only the last 3 at home now.)

  2. Attempting to make this pie right now but confused by the strawberry glaze instructions. Do u cook the glaze ? Or just the gelatin? I cooked and cooked the ingredients but it’s just a watery syrup. Think I did something wrong.

  4. Oh wow! This pie is REALLY REALLY GOOD!!! Because I am limiting dairy, I did not do the cream cheese portion. I followed the rest of the recipe as is. I had to use a Strawberry Crush juice powder/packet (approximately 1/2 tsp) because I couldn’t find strawberry Kool-Aid anywhere. Seriously, this is so delicious – guess what I’m having for brekkie today!!!
