Einkorn Sourdough Waffles or Pancakes, THM E, SF, DF

Have you ever heard of Einkorn flour? Einkorn is an ancient grain that many people with wheat sensitivities can use. This recipe makes pancakes and waffles are fluffy and soft. I used a mix of all-purpose and whole-grain Einkorn flour

This sandwich was made with egg whites, tomatoes, Feta Cheese, and greens for a THM E. Doesn’t this plate appeal to the eye and the taste buds!! The Feta Cheese gave me just a small amount of fat, less than 3 grams.

Einkorn is the oldest wheat know to man and is considered the first wheat. This wheat is easier to digest and contains more proteins and anti-oxidant than modern wheat. It is a very primitive wheat which contains only 14 chromosomes compared to 42 in regular wheat. Also, Einkorn doesn’t have the D chromosome which is linked to wheat sensitives in many people. Many people who are sensitive to wheat can use einkorn flour.

This recipe is very versatile…you can make waffles or pancakes. Both are so fluffy and soft. Even my children thought they were wonderful and some of them are picky!

I served these pancakes with pure Maple Syrup a friend gave us. He taps trees on his farm and boils the syrup over a wood fire.

Einkorn Flour does not have a lot of gluten so it will make wonderful fluffy pancakes and waffles. I love the texture and flavor of these. With a touch of pure local maple syrup, they are so delicious!

Einkorn Sourdough Waffles or Pancakes, THM E, SF, DF

  • 1 cup water
  • 3/4 cup sourdough starter, unfed works great
  • 1 1/2 cups Einkorn Flour, I used 1/2 of all purpose and whole grain
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 egg
  • 2 egg whites
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vinegar
  • Fermenting: In a mixing bowl, combine water, sourdough starter, and einkorn flour together. Allow dough to ferment for 7 hours at room temp OR 24 hours in the refrigerator. Mixing: Add cinnamon, vanilla, egg, egg whites, salt, and baking powder. Mix well. Add baking soda and vinegar. Fold into until combined. Cooking Pancakes: Preheat skillet until hot. Lightly spray pam with coconut oil spray. Drop by heaping 1/4 cup full unto the skillet. When bubble appear on the surface of the pancake, flip and fry for 30 seconds more. .Repeat until all the batter has been used. Serve with syrup of your choice. 12 large pancakes. Making waffles: I use Dash Mini Waffle Maker to make round waffles. 1/4 cup of batter fills the waffle maker. I lightly spray the waffle maker with Pam spray. Following manufacture’s directions fry the waffles. 15 waffles.
Adding vinegar and baking soda to pancakes/waffles gives them a very fluffy texture. As you can see from the picture above the batter is full of bubbles.

Waffles can be frozen in containers or bags. We pop them into a toaster to crisp them up again. It is so hnady to have a few in the freezer.

  2. I’m wondering if I can make this or other pancake recipe the morning after my third feed of my starter and make them for breakfast with the fed starter in them. I start with one cup of starter because 1/2 is not enough but 1 cup leaves me with a lot of extra so I wondered if this was possible to make the pancakes tomorrow morning with the fed starter instead of doing the 24 hour ferment or 7 hour fridge ferment. Thanks!
