Einkorn is the oldest wheat know to man and is considered the first wheat. This wheat is easier to digest and contains more proteins and anti-oxidant than modern wheat. It is a very primitive wheat which contains only 14 chromosomes compared to 42 in regular wheat. Also, Einkorn doesn’t have the D chromosome which is linked to wheat sensitives in many people. Many people who are sensitive to wheat can use einkorn flour.
This recipe is very versatile…you can make waffles or pancakes. Both are so fluffy and soft. Even my children thought they were wonderful and some of them are picky!

Einkorn Flour does not have a lot of gluten so it will make wonderful fluffy pancakes and waffles. I love the texture and flavor of these. With a touch of pure local maple syrup, they are so delicious!

I purchased this Einkorn flour bundle. It contains all-purpose flour and whole grain flour which I combined to make these pancakes and waffles

I love these Pampered Chef batter bowls for my sourdough items. I keep my starter in the 8 cup bowl. I will lay the lid over top the bowl but don’t seal it so that the sourdough can get air.

I found 2 Dash Mini Waffle Makers at a local thrift store. We love to make round waffles for breakfast sandwiches. I will even fry the eggs in the waffle maker.

I buy Mexican Vanilla and we love it. You can get either the dark or the clear. When you are making frosting/icing I love to use the clear so the frosting stay white.

Have you used Einkorn flour to make sour dough bread?
Yes, I am working on a recipe right now…
I made these as waffles and they were incredible! So light and crispy! Definitely will be making these again!
I’m wondering if I can make this or other pancake recipe the morning after my third feed of my starter and make them for breakfast with the fed starter in them. I start with one cup of starter because 1/2 is not enough but 1 cup leaves me with a lot of extra so I wondered if this was possible to make the pancakes tomorrow morning with the fed starter instead of doing the 24 hour ferment or 7 hour fridge ferment. Thanks!
you can if you use mostly whole grain in your starter.
