Hot Milk Shortcake THM S, Keto, Sugar-free, Low-carb

Bright red juicy strawberries herald the arrival of spring. They are one of the most versatile berries and the most widely cultivated. They are featured in many dishes and are one of the easiest fruits to grow. My garden has always had a large strawberry patch much to my children’s dismay. They hated the weeding but when they berries were ready the patch became much more likeable. June-bearing are my favorite kind to plant. Homegrown strawberries have the most flavor simply because the sugar converts to starch soon after they being picked.

Shortcake has always been a treat to serve with strawberries. This simple hot milk cake is easy to make and tastes so good with fresh berries. I will at times bake it in small single serving dishes. It looks so elegant served with berries, cream and a sprinkle of THM Gentle Sweet.

Hot Milk Shortcake THM S, Keto, Sugar-free, Low-carb

  • 2 eggs, room temperature
  • 1/3 cup THM Gentle Sweet
  • ¾ teaspoon vanilla
  • 1 cup THM Baking Blend
  • 1¼ teaspoons baking powder
  • ½ cup almond milk
  • 2 tablespoons heavy cream
  • 6 tablespoons butter
  • Preheat oven to 350 degrees F. Beat eggs for 3 minutes until thick and lemon colored. Add Gentle Sweet and vanilla. Mix well. Combine Baking Blend and baking powder together. Set aside. Heat milk, cream, and butter in a saucepan until butter is melted and mixture is hot. Add to mixer bowl alternately with Baking Blend mixture. Pour into a greased 8 x 8-inch baking pan or individual ramekins. Bake for 25-30 minutes or until toothpick inserted in the center comes out clean. Cool. Serve with strawberries and whipped cream. Serves 8.

I use my KitchenAid mixer and wire whisk to beat the eggs until they are thickened and lemon colored. It takes about 3 minutes with my mixer.

I have all the ingredients ready to be folded together. You can bake this cake in a cake pan or single serve ramekins.

Here the batter is ready to be poured into the baking pan and baked. The baking powder and hot liquid reacts and you will have a nice foamy batter.

The serving of cake was served with whipped cream and fresh berries. This makes a simple but elegant dessert that your guests will love.

Baking Blend is not as calorie dense as using all almond flour. That is why I use it in baking. It still gives a wonderful texture to baked items. Ingredients
