Creamy Cucumber Cabbage Salad THM S, Keto, Sugar-free

Summertime gardens will soon be producing bountifully. Salads are an important part of our meals and fresh produce is always a blessing. Cucumbers and cabbage are combined to make this salad. You will find an interesting ingredient in the dressing that adds to the flavor…Kosher Dill pickle brine!

You will find two kinds of cucumbers in my garden…pickling and a fresh eating kind. Fresh eating cucumbers are crisp, crunchy and are not bitter like pickling ones can be. These cucumbers are dark green, long and slender.

Creamy Cucumber Cabbage salad is a wonderful addition to a meal with grilled meats. Pictured above is Grilled salmon, asparagus, and steak.

Creamy Cucumber Cabbage Salad THM S, Keto, Sugar-free

  • 2 cucumbers, thinly sliced
  • ½ head cabbage, thinly sliced
  • ¼ cup chopped onions, optional
  • ½ cup mayonnaise
  • 2 tablespoons Gentle Sweet
  • 1/3 cup kosher dill pickle juice
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • Combine all ingredients together and chill for 4 hours. Serves 10.
  • I have a food processor for my Bosch Mixer. It does a great job shredding the veggies for this salad.

I used the thin slided blade to slice the cucumbers and cabbage. The onion I chop very fine.

My Bosch Mixer is at least 16 years old and still works great. I have kneaded many loaves of bread for me.

Ingredients

  • 2 cucumbers thinly sliced
  • ½ head cabbage thinly sliced
  • ¼ cup chopped onions optional
  • ½ cup mayonnaise
  • 2 tablespoons Sweet Mix
  • 1/3 cup kosher dill pickle juice
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Combine all ingredients together and chill for 4 hours. Serves 10.
