Strawberries herald the spring/summer season as roadsides stands and markets display boxes of crimson fruit. They are the easiest fruit to grow in backyard gardens and produce very well. This dessert is refreshing on warm, summer days and best of all it is a Fuel Pull. Using frozen berries thickens the dessert almost immediately after blending in soften gelatin. I am enjoying more FP desserts to balance out those meals when I just need a bit more protein and something sweet.

Strawberry Cream THM-FP
- 1 1/2 cups almond milk, divided
- 1 1/2 tablespoons unflavored gelatin
- 1 cup low fat-ricotta cheese
- 2 1/2 cups frozen, diced strawberries
- 1/4 cup THM Gentle Sweet
- 3 donks THM Stevia
- 1 scoop THM Whey Protein Powder
- pinch salt
- 1/2 teaspoon THM Vanilla
Soften gelatin in 1/2 cup almond milk for 5 minutes. Set aside. In a blender jar combine remaining almond milk, ricotta cheese, strawberries, Gentle Sweet, Stevia, whey protein powder, and salt. Blend for a few minutes until smooth. Heat softened gelatin until syrupy. With blender running, drizzle softened gelatin into blender. Blender for 1 minute. Pour into 4 serving dishes/cups. Refrigerate until set. 4 THM FP servings.
