Strawberry Shortcake Cheesecake, THM S, Keto, Sugar-free, and Gluten-free

Strawberry shortcake has always been a favorite dessert of ours. But to take up up another level combine a creamy no-bake cheesecake, strawberries, and shortcake in one dish. The flavors are just incredible!!

This cheesecake has a shortcake layer that is baked. The cheesecake part is a no-bake style that is easy to make. You can serve the cheesecake with fresh berries or you can garnish it with whipped cream and a glaze with berries. Either way it is delicious!!

The creaminess of this no-bake cheesecake is a blend of cream cheese and cottage cheese. Cottage cheese is blended smooth with other ingredients. This addition adds more protien to the cheesecake layer and you cannot taste a difference.

Below is another no-bake cheesecake that is delicious– Pistachio and Chocolate Dubai Cheesecake.

Making the shortcake crust: Beat eggs for 3 minutes until thick and lemon colored. Add Gentle Sweet and Vanilla extract. Mix well. Combine Baking Blend and baking powder together. Set aside. Heat milk, cream, and butter in a saucepan until butter is melted and mixture is hot. Add to mixer bowl alternately with Baking Blend mixture. Pour into a parchment-lined 9-inch cheesecake pan.

Bake for 25-30 minutes or until toothpick inserted in the center comes out clean. Cool. Line the edge of the cheesecake pan with parchmant paper.

In a blender jar, blend the cottage cheese, cream cheese, almond milk, THM Gentle Sweet, and Vanilla extract together until smooth.

Pour into a mixer bowl. Whip the remaining cream with the cream cheese mixture intil thickened. With mixer runing, drizzle the gelatin into the cheesecake mixture. Mix throughly.

Stir the strawberries into the cheesecake batter

Pour on cheesecake mixture top of the shortcake crust.

Smooth the top. Refridgerate until set.

You can also make a glaze for sliced berries to serve with the cheesecake.

Strawberry Shortcake Cheesecake, THM S, Keto, Sugar-free, and Gluten-free

  • Shortcake:
  • 2 eggs, room temperature
  • 1/3 cup THM Gentle Sweet
  • ¾ teaspoon Vanilla extract
  • 1 cup THM Baking Blend I often make my own Baking Mix with this recipe.
  • 1¼ teaspoons baking powder
  • ½ cup almond milk
  • 2 tablespoons heavy cream
  • 6 tablespoons butter
  • Cheesecake layer:
  • 2 cups cottage cheese
  • 8-ounces cream cheese
  • 1/2 cup almond milk
  • 1/2 cup THM Gentle Sweet
  • 1 teaspoon Vanilla extract
  • 2 tablespoons unflavored gelatin
  • 1 cup whipping cream, divided
  • 2 cups chopped strawberries
  • Whipped Cream:
  • 1/2 cup heavy whipping cream
  • 1/8 teaspoon xanthum gum
  • 2 tiny spoons THM stevia
  • Strawberry Glaze: optional
  • 3/4 cup water
  • 1 tablespoon THM Gentle Sweet
  • 1 teaspoon unflavored gelatin
  • Additional berries to garnish
  • 9-inch cheesecake pan
  • Shortcake: Preheat oven to 350 degrees F. Beat eggs for 3 minutes until thick and lemon colored. Add Gentle Sweet and Vanilla extract. Mix well. Combine Baking Blend and baking powder together. Set aside. Heat milk, cream, and butter in a saucepan until butter is melted and mixture is hot. Add to mixer bowl alternately with Baking Blend mixture. Pour into a parchment lined cheesecake pan. Bake for 25-30 minutes or until toothpick inserted in the center comes out clean. Cool.
  • Cheesecake layer: In a blender jar, blend the cottage cheese, cream cheese, almond milk, THM Gentle Sweet, and Vanilla extract together until smooth. The mixture will be stiff. Pour into a mixer bowl. Soften unflavored gelatin in 1/3 cup cream for 5 minutes. Whip the remaining cream with the cream cheese mixture intil thickened. Heat gelatin mixture until syrupy. With mixer runing, drizzle the gelatin into the cheesecake mixture. Mix throughly. Stir the strawberries into the cheesecake batter. Pour on top of the shortcake crust. Smooth the top. Refridgerate.
  • Whipped cream: Whip cream, xanthum gum, and THM stevia together until thickened. Garnish the cheesecake with whipped cream and additional strawberries. Serves 12.
  • Strawberry Glaze: Soften unflavored gelatin in water. Heat until gelatin is dissolved. Add THM Gentle Sweet. Cool until slightly thickened. Add sliced berries and spoon over cheesecake.
