Would you like a DIY low-carb baking mix? This mix is very easy to make and has a great texture. It will keep for weeks in an air tight container or you can store it for months in the freezer.

I will grind the almond flour and flax seed meal in my coffee grinder to get it super-fine. It just makes a better mix that way.

This baking mix is very similar to the Trim Healthy Mama Baking Blend and can be used interchangeable 1-1 in recipes. I have used this mix and the THM mix in recipes and the texture is the same with either mix.
Oat Fiber is not Oat flour. These are two different items and are not interchangeable. Oat fiber is a gluten-free, no calorie baking flour full of dietary fiber. If your baking mix has a weird texture/flavor it could be from an off-brand oat fiber. THM Oat Fiber is the absolute best and their is nothing else that will compare.
Also, be sure and use golden flax seed meal. It is lighter in color and taste compared to the regular flax seed meal.
There are 4 grams of fat in 1/4 cup of this mix. Using this mix in a recipe with butter and eggs will be a (S) fat category. Using it without fat in a recipe will keep it a Fuel Pull.
Low-carb Baking Mix, GF, SF
- 4 cups THM Oat Fiber
- 2 cups coconut flour
- 1 1/2 cups ground golden flax seed
- 1 cup whey protein powder or THM collagen
- 3/4 cup almond flour
- 1/4 cup psyllium powder
- 1/4 cup xanthan gum or glucomannan
- Use a coffee grinder to grind the golden flax seed and almond flour finer. Combine all ingredients together. Store in a tight container or in the freezer.
- To use, fluff with a spoon and spoon into a measuring cup.

Would this measure 1:1 if subbing for regular flour in a recipe?
I would use a scant cup (7/8 cup) to one cup flour.
Can this be used like Bob’s Red Mill or KING AUTHOR cup for cup in regular flour recipes?
I have not tried it in comparison to those mixes.
Can you please recommend a replacement for the Ammons almond flour? My daughter is sensitive to almonds. Thanks!
