Protein bars are a handy snack to keep in your fridge for those times when you are busy but still need to eat. Lemon/apricot has always been a favorite of mine and i just had to combine them together into one bar. These citrus tasting bars are so good with just a few white sugar-free chocolate chips added to them. If you only add 5-8 chocolate chips to each bar it will still be a THM FP.

Trim Healthy Mama has a Chocolate Brownie Fix that is absolutely delicious! Their bar is a Fuel Pull and I love its chocolate/peanut butter taste. When my supply is all and I want a protein bar of a different taste….I make my own. They are easy to make and with the “new” protein flavors you can make all different kinds.

Apricot Lemon Baobab Protein Bars THM FP, Sugar-Free, Low Carb
- 1 cup THM Vanilla Protein Powder
- 5 tablespoons THM Collagen
- 3 tablespoons Oat Fiber
- 2 1/2 tablespoons THM Baobab Powder
- 1/4 cup THM Gentle Sweet
- 1/8 teaspoon Mineral salt
- 1/2 teaspoon Gluccie or Xanthan Gum
- 1 teaspoon THM Apricot Extract
- 1 teaspoon MCT oil
- 5 tablespoons Lemon Juice
- White Chocolate Chips, ChocZero* or Bake Believe , optional
- Pampered Chef Bar Maker #100001
- In a Food processor bowl or mixer bowl combine dry ingredients together. Add extract, MCT oil and 4 tablespoons lemon juice. Mix well. Add remaining lemon juice if needed to make the mixture like a stiff play dough. Place 5 chocolate chips in each bar mold, if desired. Press mixture into 8 bars molds. Refrigerate. 8 THM FP Bars
- ChocZero White Chocolate Chips are a personal choice item since they do have soluble vegetable fiber in them.
I mix the ingredients in my Ninja Food Processor. Mixing it well, until it is crumbly and looks like this.

The mixture will resemble stiff play dough. Take the crumbles and press them into the bar forms. The tighter you press them the harder the bars will be. I did find that the bars with chocolate chips need to be pressed harder than the one without. Adding just a few white chocolate chips makes these bars taste like you are eating candy!

I bought this Pampered Chef Bar Maker when a friend was having a party. I love it. It is handy to make all kinds of bars for lunches, etc. There are multiple bar makers you can find in stores and on Amazon. How many bars this recipe makes will depend on the size of your bar maker.
I do keep my bars in the fridge wrapped in wax paper in a airtight container. When I leave home I put them in a small cooler bag along with any drinks I carry with me.

A time or two the bars got a little tacky/sticky after storing a few days. I dusted the bars lightly with oat fiber. That worked great!
