“Taste like Oreos” Angel Food Cake THM S, Sugar-free, Gluten-free, Keto

Angel Food cakes are a fluffy light cake made mostly from egg whites. This “Taste like Oreos” Angel Food is all of that plus it is layered with a creamy filling that will delight anyone taste buds. If you have never tried black cocoa, you will be quite pleased with the oreo taste it gives.

One of the keys to making a successful angel food cake is to make sure your mixer bowl/beaters are grease free. Your egg whites must be free of yolks and at room temperature to get the highest loft. I always use fresh eggs whites that I separate myself.

See the fluffy texture of the cake…It is soft and incredible! I have found through trial and error that THM Oat Fiber is the best. All other oat fibers will be drier and have more of a gritty taste. So if you want a successful baking day…buy the THM Oat Fiber! You will not regret it.

“Taste Like Oreos” Angel Food Cake THM S, Sugar-free, Gluten-free, Keto

  • Angel Food Cake:
  • 2 cups eggs whites, room temp
  • 1/4 cup THM Gentle Sweet
  • 1 1/2 teaspoons Cream of Tartar
  • 1 teaspoon vanilla
  • 1/2 cup THM Oat Fiber
  • 1/3 cup THM whey protein powder
  • 2/3 cup black cocoa powder
  • 1/2 cup THM Gentle Sweet
  • 1/2 teaspoon baking powder
  • Cream Cheese Frosting:
  • 8-ounces cream cheese
  • ¼ cup THM Gentle Sweet
  • 1 teaspoon vanilla
  • 1 cup whipping cream
  • 1/4 teaspoon xanthan gum
  • Chocolate Ganache:
  • 3/4 cup sugar-free dark chocolate chips
  • 2/3 cup cream
  • Cake: Preheat oven to 350 degrees F. In a mixing bowl, whip egg whites and frothy. Add cream of tartar and Gentle Sweet. Whip until soft peaks form. Add Vanilla Flavoring. Whip until egg whites mound in soft mounds that hold their shape. In a bowl, combine oat fiber, whey protein powder, black cocoa powder, Gentle Sweet, and baking powder. Carefully mix the dry ingredients into the egg whites until combined. The egg whites will deflate some due to the fat in the cocoa. Spoon batter into an Angel Food Cake Pan. Swirl a knife through the batter to eliminate air pockets. Place on the lowest oven rack. Bake for 40 minutes***. Remove from oven and turn cake upside down to cool for 4 hours. Carefully remove cake from pan be running a sharp knife along the edges of the cake pan. Divide cake into thirds crosswise. Cream Cheese Filling: Soften cream cheese. Whip cream cheese until fluffy. Add Gentle Sweet, vanilla, cream, and xanthum gum. Whip until fluffy and thick. Spread 1/2 of filling on bottom layer of cake. Place next cake layer on top of the filling. Spread remaining filling over cake. Top with last cake layer. Ganache: heat cream until almost boiling, pour over chocolate chips. Allow the mixture to set for 2-3 minutes. Stir until smooth. Pour over the top of the angel food cake, allowing some to drip down the sides. Serves 12.
  • Yes, the Gentle Sweet listed twice is correct!

These egg white have been beaten to semi stiff peaks. I am ready to fold the cocoa mixture into the egg white.

SInce there is fat in cocoa powder it will cause the egg whites to deflate just a bit. That is the reason I have added baking powder the the cake batter.

As you can see…this cake does not get as high as my Strawberry THM Angel Food Cake or the Maple Walnut Angel Food Cake does. However, it has a wonderful texture and taste just like an Oreo cookie.

  • Cake:

  1. If I don’t have the special cocoa you mentioned, can I use other cocoa? I do have some dark chocolate cocoa.

  2. Do you have to use whey protein powder, or could you use a different kind of protein powder? My daughter has a dairy allergy, and I wanted to make the cake (without the frosting & ganache) for her, but we normally use a plant-based protein powder.

  4. ~ I noticed that your pan with the Oreo cake looks different than the one you have in the link.. there is also a less expensive one than the one you have linked that looks like the pan you have used, will that pan work? It has the feet, also, do you set the cake upside on those feet to cool? I have a bunt pan, but not one specifically for angel food.. and the price of this one listed , is out of my budge but I could do the $16 dollar one that looks like the one you used .~

    • no, you never grease an angel food cake pan. The cake needs to stick to the sides of the pan to hold its shape.

  6. I made the cake and think it seems on the dry side.Do you think I overbaked it or does it make a difference what kind of black cocoa used? I got mine at a bulk food store.
