Sprouted Cinnamon Rolls, THM XO, SF

Cinnamon rolls are a wonderful treat to serve for breakfast or with coffee. There is something about a soft, sweet, gooey cinnamon roll and a hot cup of coffee. They go together like two peas in a pod.

These cinnamon rolls use sprouted flour and allulose for a blood sugar friendly roll. Allulose is found in small amounts in figs and raisins. It is very low in calories and does not the blood sugar or insulin.

What is sprouted flour, you may ask! Sprouted flour is made from whole grain that has been sprouted, dried, and then ground into flour. Sprouting grains break down antinutrients that prevent your body from from absorbing the nutrients and vitamins. This creates a grain that is much easier for your body to digest. Our newest item in our webstore is Whole Grain Sourdough Pancake mix. This mix combined sprouted and oat flours with dehydrated sourdough starter for soft, fluffy, delicious pancakes.

Lakanto Monkfruit/Allulose Sweetener can be bought in most local grocery stores. It is not as sweet as sugar but it does do very well in baking. It does not have an aftertaste like some sugar alternatives do. Our family does enjoy it and at times I will add stevia along with Lakanto Monkfruit/Allulose Sweetener so a lesser amount can be used.

Mixing the dough: In a mixer bowl combine egg , water, butter, salt, yeast, allulose, One Degree Sprouted flour, and King Arthur Bread flour. Mix well for 3 minutes. The dough will be sticky.

Lightly spray a bowl with Pam spray. Place the dough in the bowl. Cover with a lid. Place in the fridge for 4 hours or overnight.

Dust the counter with sprouted flour. Place the dough on the counter.

With a fork mix the filling ingredients together.

Roll the dough into an 18 by 34 rectangle. Spread the filling over the dough.

Roll the dough starting at the longest side. Cut into 14 rolls.

Place in a well greased baking pan.

Allow the rolls to rise until doubled in size and puffy.

Preheat the oven to 350 degrees F. Bake the rolls for 22-24 minutes or until an internal temp of 185 degrees. Remove and cool.

The sprouted flour does make the rolls look darker than whole wheat flour. They are still soft and tender.

  • Dough:
  • 1 egg
  • 1 2/3 cups water
  • 6 tablespoons butter, melted
  • 1 teaspoon salt
  • 1 tablespoon yeast
  • 1/4 cup allulose
  • 4 cups One Degree Sprouted flour
  • 1/2 cup King Arthur Bread flour
  • Cinnamon Filling:
  • 4 tablespoons butter, softened
  • 2 teaspoons cinnamon
  • 1/3 cup allulose
  • 2 donks stevia
  • 1/4 teaspoon Olive Nation Brown Sugar Extract
  • sprouted flour
  • 2 tablespoons butter, softened
  • 4 ounces cream cheese
  • 2 tablespoons Gentle Sweet
  • 2 tiny spoons THM Stevia
  • 1/2 cup heavy cream
  • Mixing the dough: In a mixer bowl combine egg , water, butter, salt, yeast, allulose, One Degree Sprouted flour, and King Arthur Bread flour. Mix well for 3 minutes. The dough will be sticky. When the mixing is completed, turn the mixer off. Allow the dough to rest for 30 minutes. Lightly spray a bowl with Pam spray. Place the dough in the bowl. Cover with a lid. Place in the fridge for 4 hours or overnight.
  • Shaping the rolls: With a fork mix the filling ingredients together. Dust the counter with sprouted flour. Place the dough on the counter. Dust the top with flour. Roll the dough into an 18 by 34 rectangle. Spread the filling over the dough. Roll the dough starting at the longest side. Cut into 14 rolls. Place in a well greased baking pan. Allow the rolls to rise until doubled in size and puffy.

  • Frosting: Whip the frosting ingredients together. Spread over the rolls.
