Would you like a perfect fall salad? This salad uses fall crops like Brussels sprouts, apples, and pumpkin seeds which is then tossed with a tangy dressing. It is the perfect combination of sweet and tartness.

Brussels Sprouts are a cool weather crop and are the best after there has been at least two frosts. We love them oven roasted but this salad is a winner, too.

I trimmed the outer leaves and any dark spots from the Brussels sprouts. I then used my Vitamix Food Processor to slice/shave them…pictured below.

I arranged all the salad ingredients on a rimmed platter. Don’t the colors look wonderful together!

The dressing is easily whisked together. You can adjust the sweetener if you like. But I have found that the sweetness of the pomegranate and apple even out the tartness of the dressing.

The dressing is drizzled over the salad and then the salad and dressing are tossed together.

Our family loves black pepper so I did sprinkle some extra over salad after I tossed it together. Since some of my family loves blue cheese, I sent a small dish on the table and they could add more if they preferred.

Try this salad, I’m sure you will love it, too. If you are not a fan of blue cheese you can use feta, too. I set this platter on the table and turned to get the rest of the food, when I turned around my family was already dishing the salad onto their plates. It is just so delicious!!
Shaved Brussels Sprout Salad, THM E, Sugar-free
- Salad ingredients:
- 4 cups shaved Brussels sprouts, 12 ounces whole sprouts
- 1 cup pomegranate seeds
- 1 red apple, cored and diced
- 2 tablespoons pumpkins seeds
- 5 tablespoons blue cheese crumbles
- Dressing:
- 3 tablespoons non-fat Greek Yogurt
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon Mustard
- 1 tablespoon THM Gentle Sweet
- 1/4 teaspoon black pepper
- pinch of salt
- Equipment:
- food processor to shred Brussels Sprouts
- Directions: Shred the Brussels sprouts using a food processor. Place shaved Brussels sprouts in a bowl. Add pomegranate seeds, diced apple, pumpkin seeds, and blue cheese crumbles.
- Mixing the dressing: Whisk together the dressing ingredients. Toss with the salad ingredients just before serving. 4 servings with 4 grams of fat per serving.
- You can add additional cheese and pumpkin seeds for an THM XO.
