Shaved Brussels Sprout Salad, THM XO, Sugar-free

Ingredients

  • Salad ingredients:
  • 4 cups shaved Brussels sprouts 12 ounces whole sprouts
  • 1 cup pomegranate seeds
  • 1 red apple cored and diced
  • 2 tablespoons pumpkins seeds
  • 5 tablespoons blue cheese crumbles
  • Dressing:
  • 3 tablespoons non-fat Greek Yogurt
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon THM Gentle Sweet
  • 1/4 teaspoon black pepper

Instructions

  1. Directions: Shred the Brussels sprouts using a food processor. Place shaved Brussels sprouts in a bowl. Add pomegranate seeds, diced apple, pumpkin seeds, and blue cheese crumbles.
  2. Mixing the dressing: Whisk together the dressing ingredients. Toss with the salad ingredients just before serving. 4 servings with 4 grams of fat per serving.
  3. You can add additional cheese and pumpkin seeds for an THM XO.
