Old Fashioned Date Pudding

Old Fashioned Date pudding brings back so many memories of my aunts and grandmother. This dessert was always served at Christmas time with lots of whipped cream. The top cake part is chockfull of dates and the bottom is a sticky caramel layer. So delicious!

I love to bake sugar-free and when I need a sugar-free syrup, the best kind I have found is ChocZero. The Caramel Syrup works perfectly in this dessert.

Dates are one of nature’s sweetest treats. Their high sugar content is lessened by the increased fiber in them. Dates are a good source of potassium, magnesium, iron, and also supply six essential B vitamins, including folate and pantothenic acid. They have a high concentration of polyphenols, an antioxidant that protects against cellular damage.

Old Fashioned Date Pudding, THM E with an XO option

  • Ingredients:
  • Sauce:
  • ¾ cup water
  • ¾ cup ChocZero Caramel Syrup
  • 2 tablespoons butter
  • 1½ teaspoons vanilla
  • Pudding Cake:
  • 1 cup sprouted flour
  • 1 cup Swerve Granular Sweetener
  • 2¼ teaspoons baking powder
  • ¾ teaspoon salt
  • 1 teaspoon vanilla
  • ½ cup almond milk or low-fat kefir
  • 1 cup chopped and pitted dates
  • ½ cup nuts, optional (THM XO when nuts are used)
  • Sauce instructions: In a small saucepan, combine water, syrup, butter, and vanilla. Cook for 3 minutes. Set aside.
  • Cake instructions: Spray an 8-inch square or a 9-inch round pan with baking spray. Preheat oven to 300 degrees. In a making bowl, combine flour, sweetener, baking powder, and salt together. Add milk, dates, vanilla, and nuts if desired. Mix well. The batter will be thick and sticky. Spread batter into prepared pan. Pour reserved sauce of the batter. The sauce will be on top of the batter. Bake for 50-55 minutes or until the center is set. The cake will be sticky and the sauce layer will move to the bottom. 8 servings
  • This recipe as written is a THM E or carb source. If you choose to serve it with whipped cream and nuts you will have an XO or crossover which is a combination of fats and carbs.

Sauce instructions: In a small saucepan, combine water, syrup, butter, and vanilla. Cook for 3 minutes. Set aside.

In a making bowl, combine flour, sweetener, baking powder, and salt together. Add milk, dates, vanilla, and nuts if desired.

Mix well. The batter will be thick and sticky.

Spread batter into prepared pan.

Pour reserved sauce of the batter. The sauce will be on top of the batter.

The cake will be sticky and the sauce layer will move to the bottom.
