Date Pudding with Sticky Sauce

Ingredients

  • Sauce:
  • ¾ cup water
  • ¾ cup ChocZero Caramel Syrup
  • 2 tablespoons butter
  • teaspoons vanilla
  • Pudding Cake:
  • 1 cup sprouted flour
  • 1 cup Swerve Granular Sweetener
  • teaspoons baking powder
  • ¾ teaspoon salt
  • 1 teaspoon vanilla
  • ½ cup almond milk or low-fat kefir
  • 1 cup chopped and pitted dates
  • ½ cup nuts optional (THM XO when nuts are used)

Instructions

  1. Sauce instructions: In a small saucepan, combine water, syrup, butter, and vanilla. Cook for 3 minutes. Set aside.
  2. Cake instructions: Spray an 8-inch square or a 9-inch round pan with baking spray. Preheat oven to 300 degrees. In a making bowl, combine flour, sweetener, baking powder, and salt together. Add milk, dates, vanilla, and nuts if desired. Mix well. The batter will be thick and sticky. Spread batter into prepared pan. Pour reserved sauce of the batter. The sauce will be on top of the batter. Bake for 50-55 minutes or until the center is set. The cake will be sticky and the sauce layer will move to the bottom. 8 servings
