Who doesn’t like a hoagie when you want a quick meal and you do not feel like cooking? These soft hoagie rolls are so delicious served with hot or cold meats.

Any kind of milk product will help to make soft rolls. I chose to use buttermilk as I have quite a bit on hand right now. This may add a trace amounts of fat to your rolls but it will be less than .5 grams per roll.

If you have been following my blog you will know that I love to bake with sourdough. Fermenting the dough makes it easier for your body to digest. Some people who are sensitive to gluten can eat sourdough bread since it has been fermented which breaks the phytic acids down. To me, there is something special about taking flour and water and turning it into a bubbling starter.
Sourdough bread is made by fermenting the dough naturally using occurring lactobacilli and wild yeast. This was the usual form of leavening bread down into the Middle Ages until it was replaced by other products. French Bakers brought sourdough techniques to California during the Gold Rush where it remains large part of the culture today.

This hoagie roll is layered with roasted turkey breast, tomatoes, dill pickles, lettuce and mustard.

Soft Sourdough Hoagie Rolls, THM E, Sugar-free
- 1 1/4 cups active sourdough starter
- 1 tablespoon honey
- 1 cup water
- 2/3 cup buttermilk
- 3 cups Prairie Gold White Whole Wheat Flour
- 2 tablespoons Vital Wheat Gluten
- 1 teaspoon yeast
- 2 teaspoons salt
- Mixing: In a 4 quart bowl combine starter, honey, water, buttermilk, and 2 cups of flour. Mix well. Add remaining 1 cup flour, vital wheat gluten, yeast, and salt. The dough should be soft and shaggy. Allow dough to set for 1 hour. Pick the dough up and fold in half. Pick the other end up and fold in half again. Repeat the stretch and folds 2 more time in the next 3 hours.
- Shaping: Divide the dough into 6 pieces. Shape each piece into an oval shape 2 inches wide by 8 inches long. Place the hoagie rolls on a well greased parchment paper covered cookie sheet. Allow the hoagie rolls to rise for 3 hours or doubled in size.
- Baking: Preheat the oven to 350 degrees F. Score the rolls with a lame. Bake for 22-24 minutes. Place rolls on a baking rack to cool. 6 hoagie rolls
- To keep your hoagie as an E fuel, use roasted turkey breast, fat free ham, lettuce, tomatoes, onions, and mustard.

An easy way to measure sourdough starter is to fill your measuring cup with water to the desired amount. Add sourdough starter to the desired amount. Your measuring cup will be much easier to clean.

In a 4 quart bowl combine starter, honey, water, buttermilk, and 2 cups of flour. Mix well. Add remaining 1 cup flour, vital wheat gluten, yeast, and salt.

Divide the dough into 6 pieces. Shape each piece into an oval shape 2 inches wide by 8 inches long. Place the hoagie rolls on a well greased parchment paper covered cookie sheet. Allow the hoagie rolls to rise for 3 hours or doubled in size. Score with a lame.

Good morning Glenda, I have both your cookbooks and really like them! I love sourdough and am excited about the new book. But I have a question, are there several varieties of Prairie Gold flour? I have tried and tried and make simply awful bread with it! I can make very nice, soft bread with unbleached white flour and King Arthur whole wheat flour.
I buy the Prairie Gold in bulk 50 pound bags. Make sure it is the hard white spring wheat.
I would love a video showing how you shape these rolls, with tips and tricks. I have tried making hot dog buns from your hamburger bun recipe and they never get to the right shape.
