Hot Cocoa Bombs — THM S, Keto, Low-carb, Sugar-free

Hot Cocoa Bombs are the rage right now! If you have never heard of Cocoa Bombs, they are cute little chocolate balls that you place into a mug. When you pour hot milk over the chocolate balls, they melt, spilling out marshmallows, chocolate chips, and cocoa mix. Children just love these and so do adults for that matter!

If you have seen these in store you will realize they can be rather costly to purchase for a family. Did you know Cocoa Bombs are very easy to make? Best of all you can make them with ingredients you prefer, like sugar-free and low-carb. My children think these are the greatest thing to have for a snack when they come home from school. With our blustery snowy winter days…these Hot Cocoa Bombs just hit the spot.

Hot Cocoa Bombs — THM S, Keto, Low-carb, Sugar-free

  • 3 tablespoons slightly heaping, Chocolate Chips, sugar-free
  • 1-2 marshmallows, homemade or ChocZero Marshmallows or Max Mallows
  • 2 teaspoons THM Gentle Sweet
  • 1 1/2 teaspoons cocoa powder
  • 2 teaspoons Coconut Oil Powder
  • 12 chocolate chips
  • additional chocolate chips for garnish
  • Instructions: I use my microwave when melting chocolate. I microwave it for 15 second intervals, stirring in between. It only take 30-40* seconds at the most to melt the chocolate chips. Divide the melted chocolate in the spheres. Using a spoon spread the chocolate over the entire mold creating a shell. * microwaves do varyInto a half sphere I placed 3/4 teaspoon cocoa, 1 teaspoon Gentle Sweet, 1 teaspoon Coconut Oil Powder, a marshmallow, and 6 chocolate chips.The chocolate shells may look full but it will work out just fine! Now is time to put the shells together. Here is a nifty trick I learned to do. I took my one quart kettle and filled it half full of water. The kettle was placed over medium heat and the water brought to a boil. removing the kettle from the burner, I carefully laid a small glass plate over the kettle. The heat made the plate hot. I removed the empty shells from the mold. Taking an empty shell, I pushed it on the hot plate to melt the edges. As soon as I saw the edges were melting I place it on top of a full shell, pushing the two halves together. I repeated this until I had each Cocoa Bomb together.You can drizzle additional chocolate over the finished bombs if desired. 2 Hot Cocoa BombsTo serve: Heat 1 cup of nut milk* of your choice. Place a Hot Cocoa Bomb in a mug. Pour the hot milk over the bomb and watch as it melts and spills out all its goodness. Stir to combine ingredients! Enjoy! * I will add 1 tablespoon cream to almond milk to make a more creamier drink

You can make all kinds of flavors of Cocoa Bombs. My favorite chocolate to use to make the shell is Lily’s Chocolate Chips. I did try THM Milk Chocolate but it was softer to work with when putting the two halves together. Dark and Milk Chocolate are prefered by most people but my children love Chocolate Mint Cocoa Bombs. The mint and cocoa together is so refreshing! I even made some with Lily’s Peppermint Chocolate Chips!

If you want to put marshmallows in you cocoa bombs I have just the perfect recipe for you. Luda from My Trim Kitchen has a Fluffy Low-carb Marshmallows that works just great for this recipe. This marshmallow recipe may look difficult but it is very easy to make. All you need is a mixer to beat the egg whites and cooked sugar-free syrup together. The only addition I would make is to add a few drops of Lorann Marshmallow Extract to the mixture when you are whipping the egg whites and syrup together. If you prefer to use already made marshmallows ChocZero and Max Mallows work very well in these.

This mixer bowl full of the whipped marshmallows is ready to be poured into a baking sheet. The marshmallow mixture is allowed to set and dry overnight. I use a cookie cutter dipped in hot water to cut heart shapes for the cocoa bombs. My children were more than happy to eat the edge pieces.

I do the Cocoa Bombs in two steps…I make one batch of Luda’s Marshmallows. This will make more than enough of marshmallows for your cocoa bombs but my children and hubby kept snatching pieces as I was cutting them. After I make the marshmallows, I then make the chocolate shells. I used two Inch Half Ball Sphere Molds. For two Hot Cocoa Bomb you will need three slightly heaping tablespoons chocolate chips. If you have a bigger mold you will need more.

I use my microwave when melting chocolate. I microwave it at 15 second intervals, stirring in between. It only take 30-40 seconds at the most to melt the chocolate chips. Divide the melted chocolate in the four half spheres. Using a spoon spread the chocolate over the entire mold creating a shell. Repeat using your desired chocolate to fill each mold.

As you can see I choose to use different chocolates to make my Hot Cocoa Bombs! I placed these molds in the freezer to harden. Since I was busy that day to went 2 days until I could finish my bombs!

When the marshmallows were dry to the touch I cut out heart shapes. These I allowed to air dry for a few hours and then placed them into a tight container. Even if they do get a little dry they still work perfectly!

To assemble the Hot Cocoa Bombs: Into a half sphere I placed 3/4 teaspoon cocoa, 1 teaspoon Gentle Sweet, 1 teaspoon Coconut Oil Powder, a marshmallow, and 6 chocolate chips.

The chocolate shells may look full but it will work out just fine! Now is time to put the shells together. Here is a nifty trick I learned to do. The kettle was placed over medium heat and the water brought to a boil. removing the kettle from the burner, I carefully laid a small glass plate over the kettle. The heat made the plate hot. I removed the empty shells from the mold. Taking an empty shell, I pushed it on the hot plate to melt the edges. As soon as I saw the edges were melting I place it on top of a full shell, pushing the two halves together. I repeated this until I had each Cocoa Bomb together.

I carefully removed each Hot Cocoa Bomb from the mold. You can serve them like this or you can drizzle them with chocolate.

I melted 1 tablespoon of white chocolate and 1 tablespoons of milk chocolate to drizzle over these 6 cocoa bombs. Doesn’t it make them look so pretty!

Below you will see why these are called Hot Cocoa Bombs! Heat 1 cup of nut milk* of your choice. Place a Hot Cocoa Bomb in a mug.     Hopefully you see this comment almost a year later and I’d like to make these ahead of time. Will they be ok if I freeze them?? Or tell my friends to keep them in the freezer until ready to consume. Not sure how long the marshmallow will last once made since nothing has preservatives.
