A simple classic Broccoli Salad is always a hit with our family and when taken to community dinners I usually bring an empty bowl home. This salad combines the best of home-cured, smoked bacon, tart cranberries, and fresh broccoli in a creamy dressing. If you would like, you can even add some cauliflower to this salad.

Broccoli is a cruciferous vegetable, a superfood, low in calories, full of antioxidants, and just plain good for you! The word broccoli comes from the Italian word broccolo which mean the flowering crest of a cabbage.
If you ever travel the back roads of Lancaster County, Pa, especially in the fall, you will see fields upon fields of cabbage broccoli, and cauliflower. Below is a picture of a field of cabbage/broccoli/cauliflower.

My husband loves to smoke meats and he cures and smokes bacon for us every year. We are so spoiled cause we think bought bacon doesn’t taste as good as our own home-cured and smoked does. Below are bacons hanging on our smokehouse. These are ready to be placed into the cooler. Two days later we will slice, vacuum pack, and freeze the bacon.

Broccoli Salad THM S, Keto, Sugar-free, Low-carb
- 8 slices bacon, fried and crumbled
- 6 cups broccoli flowerets and stems, chopped (or 4 cups broccoli and 2 cups cauliflower pieces)
- 1/2 cup finely diced red onions
- 1/2 cup dried sugar-free cranberries
- Dressing:
- 1 1/4 cups Duke’s Mayonnaise
- 1/3 cup sour cream
- 1/3 cup Parmesan Cheese
- 2 tablespoons Gentle Sweet
- 1 teaspoon salt
- 1/4 teaspoon pepper
- In a 4 quart bowl toss together bacon, broccoli, red onions, and cranberries. In a small bowl whisk together mayonnaise, sour cream, Parmesan Cheese, Gentle Sweet, salt and pepper until well combined. Toss dressings with veggie mixtures. Refrigerate for 4 hours before serving. 10 servings

Wilted Spinach Salad is a favorite when I want a FP Salad as a side dish. Spinach is one of the first veggies to come up in my garden. It love cool weather and is so easy to grow.
