Chocolate Raspberry Truffles THM S, Sugar-free, Low-carb, Keto

Have you ever looked at Chocolate Truffles in a candy store and wished they would be sugar free so you could eat them? Now you can! These Raspberry Truffles are smooth, creamy, and have just the right burst of raspberry flavor. Best of all, they are sugar-free. And if you don’t have time, you don’t even have to dip them in chocolate. The creamy centers are so delicious eaten right out of the fridge.

I have always enjoyed making holiday treats. Recently, I found an old recipe for truffles that I made years ago. I decided to experiment making them sugar-free. The “new” Bake Believe White Chocolate Chips that can be found at Walmart in the baking aisle I used for the truffle filling. These chocolate chips are the only kind that has a sugar free white chocolate chip.

Bake Believe Chocolate Chips are sweetened with Erythritol and Stevia. They come in three flavors, White, Dark, and Semi-sweet. The Semi-sweet is preferred by most of our family but the dark is a favorite of mine, too. The Dark Chocolate Chips are my favorite to coat truffles.

Chocolate Raspberry Truffles THM S, Sugar-free, Low-carb, Keto

  • Truffle Filling:
  • 1 1/3 cups OR 7 ounces Bake Believe White Chocolate Chips
  • 4 ounces cream cheese
  • 4 tablespoons heavy whipping cream
  • 4-6 drops LorAnn Raspberry Oil
  • pink food coloring
  • Coating for dipping:
  • 2 cups Bake Believe Dark Chocolate Chips
  • 2 teaspoons Coconut Oil
  • Garnish:
  • 2 tablespoons Bake Believe White Chocolate Chips
  • 1/8 teaspoon coconut oil
  • pink food coloring
  • Truffle Filling: In a glass measuring cup add Bake Believe White Chocolate Chips , cream cheese, cream, and Raspberry Oil. Microwave for 30 seconds, stir. Microwave for 15 seconds intervals, stirring after each time until chocolate chips are melted. Add pink food coloring and stir until you get a marbled look. Cool truffle filling slightly until you are able to roll it in small balls. Chill. Coating: Combine Bake Believe Dark Chocolate Chips and Coconut oil in a glass measuring bowl. Microwave for 30 seconds, stir. microwave for 15 seconds intervals, stirring after each time until chocolate chips are melted. Dip each truffle in the melted chocolate. Allow chocolate to harden. Garnish: In a small cup, combine Bake Believe White Chocolate Chips, oil and a drop of pink food coloring. Microwave for 15 seconds. Stir. Microwave again unit melted. Soon melted chocolate into a small ziploc bag. Cut off the tip of the one corner. Drizzle chocolate garnish over truffles. 24 truffles.

These truffles were dipped and are hardening. By refrigerating the truffles before dipping the chocolate will harden quickly.

Drizzle the garnish chocolate over each truffle.

I stirred the pink food coloring just enough to give the truffles a marbled effect. You can omit the food coloring if you prefer or use Red Beet Powder for coloring.

Ingredients
