Coconut Cream Truffles, THM S, DF, SF, GF, and Keto

Christmas wouldn’t be complete without candy! Here is another candy recipe to add to your favorites for this holiday season. Best of all–it’s sugar, dairy, and gluten-free! Coconut Cream Truffles are delicious, creamy with the just the right burst of coconut flavor. You even have the option of coating them 3 different ways. My favorite coating for these truffles is dark chocolate. There is something about dark chocolate and coconut that I love!

If you have never tried the Bake Believe Chocolate Chips, you need to. They come in three different flavors, Dark, Semisweet, and White. These chocolate chips are sweetened with Stevia and Erythritol. You would never know by their taste that they are sugar-free and my family loves them. Bake Believe Chocolate Chips can be found in most Walmart Stores. Look for these chocolate chips in the baking aisle with the regular chocolate chips.

Creamy truffles are a favorite to make. This recipe only take a few ingredients and is so satisfying to your sweet tooth. I hope that you enjoy this recipe as much as my family does.

Coconut Cream Truffles, THM S, DF, SF, GF, and Keto

  • Truffle Filling:
  • 1 cup Bake Believe Chocolate Chips (I used 1/2 White and 1/2 Semi-Sweet)
  • 1/4 cup coconut cream, sugar-free
  • 1/2 teaspoon THM Coconut Extract
  • Chocolate Coating:
  • 1/2 cup Bake Believe Dark Chocolate Chips
  • 1/2 teaspoon Coconut Oil
  • Additional Garnishes if desired:
  • cocoa powder
  • unsweetened fine coconut
  • Truffle Filling: In a glass measuring cup, combine Bake Believe Chocolate Chips, coconut cream, and extract. Microwave for 15 seconds, stir. Microwave for 15 seconds twice, stirring after each time until chocolate chips are melted. Cool truffle filling slightly until you are able to roll it in small balls. Chocolate Coating: Chill the truffles for 1 hour before dipping. Combine Bake Believe Dark Chocolate Chips and Coconut oil in a glass measuring bowl. Microwave for 30 seconds, stir. Microwave for 15 seconds intervals, stirring after each time until chocolate chips are melted. Dip each truffle in the melted chocolate. Sprinkle with additional coconut. Allow chocolate to harden. Coconut Coating: Roll each truffles in coconut as soon as you shape the truffle so the coconut adheres. Cocoa Coating: roll each truffle in cocoa powder as soon as you shape them. 16 truffles. Garnish: 24 truffles.

Some varieties of Coconut Cream has sugar in them. The Thai Coconut Cream is gluten and sugar free.

When the truffle filling has cooled slightly, I use a small cookie scoop to dip out the truffles onto parchment paper. Then I roll them in balls. If using cocoa powder or coconut for a coating, roll them right after you shape them so the coating sticks. If you want a chocolate coating, refrigerat the truffles for 1 hour. The chocolate coating will harden much quicker if the truffles are cold.

  2. These look amazing! Do you think Lily’s chocolate chips would work well? The inulin in Bake Believe causes stomach upset for us.
