Mint Chocolate Iced Latte THM-FP, SF, Low Carb, GF

Coffee is a favorite drink of mine as you probably can tell by now! This Mint Chocolate Iced Latte is delicious and so refreshing! You can’t go wrong paring these flavors together. The Latte in itself in is a FP but if you garnish it with whipped cream as pictured it is an S. I will often drink it without whipped cream but it is special to serve to guests with garnishes and my daughters think it need whipped cream, too!

I was introduced to Mint Chocolate Latte many years ago when our son spent a few months in the hospital. There was the little coffee shop next to the cafeteria that made the most delicious drinks. Needless to say, these were laden with sugar! but I have fond memories of that little shop.

In my fenced in garden in a raised bed I have Mint Tea growing. It is loving this cool fall weather we are having. This tea can be used to make a simple syrup for drinks. But I do use extracts for convenience when I am busy.

If I have any leftover coffee from our morning pot I will freeze it in ice cube trays. This is so handy to add to iced coffee when I want a cold drink! I love Tupperware ice cubes trays because they have lids on.

Mint Chocolate Iced Latte THM-FP, SF, Low Carb,GF

  • 1 cup cold coffee
  • 1/2 cup almond milk
  • 1 tablespoon half and half
  • 1 tablespoon cocoa powder
  • 1 tablespoon Collagen or Whey Protein Powder
  • 3-4 teaspoons THM Gentle Sweet
  • 5 drops LorAnn Chocolate Mint
  • 8-10 frozen coffee ice cubes
  • Whipped Cream for garnishing if desired
  • In a blender cup combine coffee, almond milk, half and half, cocoa powder, Collagen, Gentle Sweet, and Chocolate Mint Flavoring. Blend until frothy. Place coffee ice cubes in a jar. Pour the blended coffee over ice cubes. Garnish with whipped cream if desired. Serves 1.

Ingredients

  • 1 cup cold coffee
