Tomatoes are very popular garden item and can be found in any color, shape, and size. My favorite tomatoes are Heirlooms or open-pollinated kinds. These tomatoes don’t always have the nicest shape but they have the most wonderful flavor and texture. Mortgage Lifter is one heirloom kind I plant every year. We love the meaty flesh and the wonderful flavor. You will also finds these kinds; Yellow Brandywine, Green Zebra, and Amish Paste Tomatoes in my garden. There are so many recipes to make using tomatoes and it is hard to pick out a favorite. This Salsa is a delightful addition to summertimes menus. It can be served with Baked Tostitos, Lavash Pitas, or as a condiment for meats.

Tomatoes have some very great health benefits. A medium tomato or 1 cup diced tomato provides over 1/3 of the daily allowance of Vitamin C and nearly a third of Vitamin A. Tomatoes also are a wonderful source in antioxidant Lycopene and help to prevent cardiovascular disease. They are also a great source of fiber, iron, and potassium.

Dynamite Salsa THM-FP

  • 4 cups tomatoes, diced
  • ¾ cup onion, finely diced
  • ½ cup peppers, finely diced
  • 2 jalapenos, diced
  • 2 teaspoons Gentle Sweet
  • 1 teaspoon salt
  • ½ teaspoon oregano
  • 1 ½ tablespoons lime juice
  • 2 teaspoons apple cider vinegar
  • ½ cup tomato paste
  • 1 garlic clove, minced
  • 1 teaspoon cumin
  • 2 tablespoons fresh cilantro
  • Combine all together and refrigerate for 4 hours to combine flavors. Serve with Lavash Pitas or Baked Tostitos for an E meal. Serves 10-12
  • The easiest way I have found to dice veggies is with the Vidalia Chop Wizard. I have 2 of them and use them when canning salsa.

Ingredients

  • 4 cups tomatoes diced
