Cranberry Coconut Protein Baobab Bars THM FP, Keto, Sugar-free, Gluten-Free

Protein Bars!! I love them for a quick snack when I’m busy at home but I still need something to eat or when I’m traveling. Cranberries and Coconut pair wonderful in this bar. When cranberries can be found in grocery stores over the holiday season, I will purchase a number of bags to dry or freeze. These dried cranberries make a wonderful, chewy addition to protein bars.

Coconut is considered an THM S/Keto. These bars use about 2 teaspoons of coconut per bar which is only 3 grams of fat. With the added MCT oil you will have less than 4 grams of fat per bar. So these bars are a FP when you count numbers! Yay!

I do keep my bars in the fridge wrapped in wax paper in a airtight container. When I leave home I put them in a small cooler bag along with any drinks I carry with me.

Cranberry Coconut Protein Baobab Bars THM FP, Keto, Sugar-free, Gluten-Free

  • 1 cup THM Whey Protein Powder
  • 5 tablespoons Collagen
  • 2 tablespoons Oat Fiber
  • 3 tablespoons Baobab Powder
  • 1/4 cup Gentle Sweet
  • 1/8 teaspoon Mineral Salt
  • 1/2 teaspoon Glucomannan or Xanthan Gum
  • 1 1/2 teaspoons Vanilla Extract
  • 1 teaspoon MCT Oil
  • 5 1/2 tablespoons water
  • 1/2 cup dried cranberries
  • 1/3 cup dried medium unsweetened coconut
  • Pampered Chef Snack Bar Set #100001
  • In a Food processor bowl or mixer bowl combine dry ingredients together. Add extract, MCT oil and 5 tablespoons water. Mix well. Add cranberries and additional water if needed to make the mixture like a stiff play dough. Sprinkle coconut flakes in each bar mold. Press mixture into 8 bars. Sprinkle with remaining coconut flakes. Refrigerate. 8 THM FP Bars

The mixture will resemble stiff play dough. Take the crumbles and press them into the bar forms. The tighter you press them the harder the bars will be. After the bars are in the fridge for a few days they will also get stiffer as the fiber soak up the moisture.

I sprinkled about a teaspoon of unsweetened coconut into each bar mold. I then pressed the bar crumbles into the molds. Then I sprinkled another teaspoon of coconut over each bar and pressed lightly.

I bought this Pampered Chef Bar Maker when a friend was having a party. I love it. It is handy to make all kinds of bars for lunches, etc. There are multiple bar makers you can find in stores and on Amazon. How many bars this recipe makes will depend on the size of your bar maker.

Oh Glenda,,,,these bars sound wonderful…I am getting ready to make them right now, but I noticed that even though you say they are Fuel Pull, at the end of the recipe you have written “8 THM S Bars”. Does this mean if you make 8 bars, they are S and not FP? If so, how many bars do you need to make to get it into FP territory?

  2. Is there anything you can substitute for the baobab powder? I don’t have any but would like to make the bars. I realize it wouldn’t have the nutritional benefits the baobab has.

  5. Glenda, just made this. It turned out VERY sticky. Only used the 5T water. Did not use a food processor, but mixed by hand–not sure if that would have anything to do with the texture? Thoughts to “stiffen up”? More baobab? Oat fiber?
