Are you ever in a hurry for breakfast? This Quiche is my favorite Fuel Pull breakfast when I need a quick option. You can use any low carb vegetables in it. One of the great things about summer is that you can go out to you garden and pick veggies to use. You can’t get it any fresher than that. I have a small 6 inch pie plate that works perfect for this quiche. This quiche can be made dairy free by omitting the cottage cheese.

Turkey Ham and Veggie Quiche THM FP
- 2 cups cut up veggies–I use mushrooms and zucchini
- 1 slice fat-free turkey breast
- 3 egg whites
- 1 teaspoon Nutritional Yeast
- 2 tablespoons low-fat cottage cheese
- Mineral Salt and Pepper to taste
- Place vegetables in a microwaveable dish. Microwave for 2 minutes. Arrange turkey breast over vegetables. Set aside. With a Kitchen Aid Hand Blender , blend egg whites, Nutritional Yeast t, and cottage cheese together. Pour over vegetables. Sprinkle lightly with Mineral Salt and pepper. Microwave for 2-3 minutes. 1 serving.
- Omit cottage cheese for a dairy free quiche.

We have laying chickens and they lay green, blue and brown eggs. The children love to gather eggs just to see the colors.
