Coffee Roasted Beef and Pork THM-S

With Oven, Insta-pot, and Crock Pot Instructions.

Roasted Beef is a comfort food to many people. My late mother-in-law would roast beef and pork together and it was so delicious. We, usually don’t think of coffee as an ingredient in roast beef but the acids in the coffee help to tenderize the meat and make a rich dark broth. I use my own All Purpose Seasoned Salt blend to season the meat but you can use other on-plans Season salts as well. I do think the addition of Smoked Paprika to the All Purpose Seasoned Salt gives a wonderful flavor to the roasted meat.

Tender Coffee Roast Beef and Pork THM-S

Oven method–Preheat oven to 300 degrees F. In a skillet over medium heat using olive oil, brown roasts on both sides. Remove roast from skillet, sprinkle each side heavily with seasoned salt, and place in a roast pan. Saute onions and garlic in skillet until tender. Add to the roasts in roast pan. Pour coffee and red wine vinegar over the roast. Add lid to roast pan and place into preheated oven. Bake for 4 hours. Remove meat to serving platter. Strain broth. Pour 2 cups broth in a saucepan. Bring to a boil. Whisk in oat fiber and xanthan gum. Boil for 2 minutes. Serve with roast. For a thicker gravy use the amounts list in parentheses.

Insta-pot method–Using an 8 quart Insta-pot and using the the saute button, brown the roasts with olive oil. Season the roast heavily on both sides with All Purpose Seasoned Salt. Saute onions and garlic. Pour coffee and red wine over roast. Pressure cook roast for 75 minutes. When ready to serve. Remove meat to serving platter. Strain broth. Pour 2 cups broth in a saucepan. Bring to a boil. Whisk in oat fiber and xanthan gum. Boil for 2 minutes. Serve with roast. For a thicker gravy use the amounts list in parentheses.

Crock Pot Method: In a skillet over medium heat using olive oil, brown roasts on both sides. Remove roast from skillet, sprinkle each side heavily with seasoned salt, and place in a crockpot. Saute onions and garlic in skillet until tender. Add to the roasts in crockpot. Pour coffee and red wine vinegar over the roast. Cover with lid. Turn crockpot on high and bake for 6 hours. When ready to serve. Remove meat to serving platter. Strain broth. Pour 2 cups broth in a saucepan. Bring to a boil. Whisk in oat fiber and xanthan gum. Boil for 2 minutes. Serve with roast. For a thicker gravy use the amounts list in parentheses.

  1. Glenda, do you think I could do this in a 6 qt IP? I have two small beef roasts I defrosted this morning, one is just under 3# the other just under 2# and I was getting ready to try this for dinner and just realized it says 8 qt IP…ugh!!
