Sauerkraut Salad, THM FP, DF, GF

This tangy sweet sauerkraut salad is just a perfect blend of fermented and fresh veggies. It’s the perfect side dish to add to a meal. It pairs well with all kinds of meat and is full of probiotics. It is so delicious on brats, hot dogs, or even on eggs for breakfast.

Sauerkraut is a type of fermented food that has been eaten for many many years. The origin of sauerkraut can be traced back to ancient China before it made its way into Eastern Europe. The word sauerkraut came from the German words “sauer” meaning sour and “kraut” meaning cabbage. In Europe, sauerkraut became a common winter staple when fresh veggies were not available.

Our family has continued the tradition of making sauerkraut but use electric slicers to finely slice the cabbage. We still pack it by hand into large crocks or heavy 5-gallon buckets. This lacto-fermented cabbage supplies probiotics that improve digestion, gut health, and improves immune functions. Sauerkraut is low in calories, high in fiber, Vitamins A, C, and K, and has lot of minerals.

In today’s world, sauerkraut is often served with hot dogs, brats, sausages, sandwiches, and more. I often have a crock of sauerkraut fermenting on my kitchen counter. I have amounts listed for a 2 gallon or a 10 gallon crock on this blog post….. Old Fashioned Sauerkraut

The fresh veggies are finely diced before adding them to the sauerkraut. These colors look so beautiful together.

This is how the sauerkraut looks in my fermenting crock.

I will keep it in my crock and use it as needed. I do at times pack it in quart jars and store in my fridge.

Sauerkraut Salad, THM FP, DF, GF

  • 2 cups sauerkraut, drained
  • 1 cup finely diced celery
  • 1/2 cup diced red bell pepper
  • 1/2 cup finely chopped red onion
  • 1/2 teaspoon mineral salt
  • 1/2 teaspoon black pepper
  • 1/4 cup THM Gentle Sweet
  • 2 tablespoons olive oil
  • 1/4 cup apple cider vinegar
  • Combine all ingredients together. Chill for 12 hours for flavors to combine. Serve as a side with grilled hot dogs, brats, or sausage.

We even eat it on scrambled eggs for breakfast.

Ingredients

  • 2 cups sauerkraut drained
