Peaches are a sweet juicy fruit that I can hardly get enough of. The season is just to short for all the recipes I would like to try. This peach tart has a creamy filling with a layer of peaches sprinkled with a bit of cinnamon.

THM E desserts are more scarce than S desserts simply because it is easier to make a dessert with cream cheese, whipping cream, butter, etc. This tart uses low-fat Greek yogurt and ricotta cheese for the creamy filling along with egg whites instead of whole eggs. Pears or apples could also be used instead of peaches if you prefer.

At our previous place we had an orchard of 30+ trees. Peach trees took work to trim/prune and spay but they produced the best juicy tree ripened peaches. Some of my favorite kinds of peaches are Red Haven, Contender, and Baby Gold which I used strictly for canning.

Creamy Peach Tart, THM E, GF, SF
- Crust:
- 1/2 cup oat flour
- 1/2 cup rolled oats, coarsely ground
- 1 egg white
- 1 tablespoon melted butter
- 1 tablespoon water
- 1 1/2 teaspoons Gentle Sweet
- 1 teaspoon cinnamon
- Filling:
- 1 cup low-fat Greek Yogurt
- 3/4 cup low fat ricotta cheese
- 2 eggs whites
- 1 egg
- 1/2 cup Gentle Sweet
- 1 teaspoon vanilla
- 1 tablespoon THM Baking Blend
- 2-3 peaches, peeled and sliced thinly
- lemon juice
- cinnamon
- Mixing crust: Preheat oven to 350 degrees F. In a mixer bowl combine oat flour, oats, egg white, butter, water, Gentle Sweet, and cinnamon together until crumbly. Press into a 10-inch round tart pan. Bake 10 minutes.
- Filling: In a mixer bowl combine yogurt, ricotta cheese, egg whites and egg. Mix well. Add Gentle Sweet, vanilla, and baking blend. Mix well. Pour over baked crust. Spread the filling over the crust. Arrange peaches over the filling. Brush peaches with lemon juice. Sprinkle with cinnamon.
- Baking: Bake 27-30 minutes or until mixture is set. Cool. 10 servings

Arrange peaches over the filling. Brush peaches with lemon juice. Sprinkle with cinnamon. These peach slices are arranged as a rose but you can simply lay them however you would like over the crust.

Bake 27-30 minutes or until mixture is set. Cool.
