Mixing crust: Preheat oven to 350 degrees F. In a mixer bowl combine oat flour, oats, egg white, butter, water, Gentle Sweet, and cinnamon together until crumbly. Press into a 10-inch round tart pan. Bake 10 minutes.

Filling: In a mixer bowl combine yogurt, ricotta cheese, egg whites and egg. Mix well. Add Gentle Sweet, vanilla, and baking blend. Mix well. Pour over baked crust. Spread the filling over the crust. Arrange peaches over the filling. Brush peaches with lemon juice. Sprinkle with cinnamon.

Baking: Bake 27-30 minutes or until mixture is set. Cool. 10 servings
