Rhubarb is one of the first plants to poke through the ground in the spring. These tart red stalks can be used in to many ways. Pair them with lemons in this recipe to make a refreshing drink.

Rhubarb is a vegetable often categorized as a fruit. Due to its tartness it is often combined with sugar in desserts and jams. Rhubarb is commonly referred to as a pie plant in Europe and North America.

A Strawberry Rhubarb Crisp is another way to use these tart red stalks in a tasty way.

Rhubarb Lemonade – Sugar-free, THM FP
- 4 cups water, divided
- 2 1/2 cups sliced rhubarb
- 2/3 cup THM Gentle Sweet
- 1/4 teaspoon THM Stevia
- 4 lemons
- additional water and ice
- Combine water, rhubarb, Gentle Sweet, and Stevia together in a saucepan. Cook for 10 minutes. Cool. Juice 3 lemons. Set aside. In a blender jar, blend the rhubarb mixture with an additional 2 cups of water until smooth. Pour into a gallon picture. Add lemon juice, water, and ice to fill the picture. Serve with lemon slices as a garnish. 1 gallon Rhubarb Lemonade.
- If desired you can blend 4-6 strawberries with the rhubarb or add 1 12-ounce can of Strawberry Bubly.
