Caprese Pasta Salad, THM S, SF

Pasta Salads are so delicious and simple to make on hot summer days. This Caprese Pasta Salad will be a great addition to your picnics and potluck dinners. Best of all, it is fast, so simple, and has a great eye appeal with the red, purple, and green! Add grilled chicken or shrimp and you have a complete meal!

What makes this salad so simple is…..purchase the smallest tomatoes so you don’t need to cut them in half, get the minced basil in the produce department, and use mozzarella pearls. It takes just a few minutes to cook and assemble the salad. The flavor is the best if the salad can be refrigerated for 4 hours or more if you can wait that long.

Caprese Pasta Salad, THM S, SF

  • Ingredients:
  • 12-ounces (1 box) Dreamfield Pasta
  • 3 cups cherry tomatoes
  • 2 8-ounce packages of mozzarella balls, I prefer the pearls
  • 1 cup finely diced red onion
  • 1 12-gram package chopped basil or 1/2 cup chopped fresh basil
  • 1/3 cup Avocado Oil Blend
  • 1/4 cup white balsamic vinegar
  • 2 tablespoon THM Gentle Sweet
  • 1 teaspoon mineral salt
  • 1 teaspoon coarsely ground black pepper
  • 2 garlic cloves, minced
  • Instructions: Fill a 4-quart pot with 2 quarts water. Bring to a boil. Add the pasta and cook until 6-7 minutes or until al dente. Drain. Rinse with cold water. Set aside. If using larger mozzarella balls, cut in half. Toss the pasta, tomatoes, mozzarella pearls, red onion, and basil together. With a whisk, whisk together the oil, vinegar, Gentle Sweet, salt, pepper, and garlic. Pour over pasta. Toss to coat. Refrigerate to 4 hours or more for the flavors to combine. 12 servings

I sprinkled coarse black pepper over the salad before serving. I love the pop it gives to your taste buds!
