Hot humid summer days are here and our family enjoys lighter meals on these days. Salads are always a favorite. This recipe was inspired by our family’s love for spicy food. Grilling the onions and jalapenos add a wonderful flavor. You can add more or less jalapenos to adjust the spiciness to your preference. My husband smokes all of the bacon we use in his smokehouse. This has me spoiled with wonderful bacon for my cooking.

If you don’t have time to grill the jalapenos and onions you can use an a Ninja Air Fryer. That works well to blister the skin on the jalapeno and onions. I use Dreamfield Pasta as they are formulated not to cause a spike in blood glucose. They taste just like regular pasta and I can feed them to my picky eaters without a problem. Each person is different so you may need to research this product before using. It may affect some people differently.
The Liquid Smoke and Smoked Paprika add that special flavor of grilled Jalapeno Poppers. For ease in prep you can use ready cooked, crumbled bacon in those convient packages you can buy in the store. My 10 year old daughter loves to help me cook. Her job is to fry the bacon in the Ninja Air Fryer. That is so convenient as the splatters are all contained.
Jalapeno Popper Pasta Salad THM-S
- 1 medium sweet onion
- 3 jalapenos
- 1 box Dreamfield Elbows
- 1 1/2 cups finely diced celery
- 2 cups shredded cheddar cheese
- 1 cup cooked crumbled bacon pieces
- Dressing:
- 1 cup sour cream
- 1 1/4 cup mayonnaise
- 3 ounces reduced fat cream cheese
- 2 teaspoons taco seasoning
- 2 tablespoons THM Gentle Sweet
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- 1 1/2 teaspoon smoked paprika
- 1/2-3/4 teaspoon mineral salt
- 1/4 teaspoon white pepper
- 1 1/2 teaspoons Liquid smoke
- 1/4 cup white wine vinegar
- 1/4 cup water
Grill jalapenos and onions until the skin/outside layer in browned. Set aside to cool. When cooled, finely dice onion. Cut peppers in half and remove seeds and membranes. cut into small pieces. Cook the Dreamfield Pasta following manufacturer’s instructions on the box. Drain and rinse with cold water. Add celery, cheese, bacon, and grilled onion and jalapeno to pasta. Set aside. Combine dressing ingredients until well blended. Toss with pasta and veggies. Refrigerate for 4 hours to combine flavors. Serve 10.
To make this a main dish salad, grilled shredded chicken can be added.

This sounds delicious! Do you grill the onions whole or cut somehow?
I would also love a blog post all about how your husband does bacon! We have raised pigs in the past but have no idea about how to do bacon.
I cut the onions in half to grill them.
