Spring is in the air as the days are longer, the sun is warmer, and of course time to start thinking of planting my garden. One veggie you will always find in my garden is eggplants. I love eating them in all kinds of ways.

Eggplants are a nutrition-dense food meaning they contain quite a few minerals, vitamins, and fiber with very few calories. They are also high in antioxidants which help prevent heart disease and cancer.
The most common eggplant you will find in store is the dark purple Black Beauty type. But did you know that eggplants come in all shapes and sizes? You can grow Striped Fairy Tale, White Star, long skinny purple, tiny round green eggplants , and all other sizes and colors in between these I mentioned. The eggplant I am holding I bought at our local grocery store and it is a Black Beauty.

I always peel the skin of an eggplant before I cut it into slices. As you can see this eggplant was fairy large. When I grow them in my garden I generally don’t allow them to get so big. I prefer smaller eggplants so the seed cavities are not so large or the eggplant bitter.

I dip the eggplant slices in the beaten egg whites and then into the breading. I repeat with each eggplant slice until they are all breaded.

I have a Ninja Foodie Air Fryer which I love. I lightly spray both sides of the eggplant slices with Olive Oil Pam Spray. The slices are then laid on the air fryer rack and fried at 390 degrees F for 15-18 minutes. Pure deliciousness without all the fats from pan frying.
Air Fried Eggplant, THM FP, DF, GF, SF
- 1 medium eggplant, peeled and sliced 3/4 inch thick

- 2 egg whites
- 2 tablespoons water
- Breading:
- 3 tablespoons THM Nutritional Yeast
- 1/4 cup THM Baking Blend
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 teaspoon Italian Seasoning
- 1/2 teaspoon salt
- Olive or Butter Pam Spray
- Egg Wash and Breading Prep: Beat the egg whites and water together. Set aside. Combine the breading ingredients together in a shallow bowl. Breading the eggplants: Dip each eggplant slice into the egg wash and then immediately into the breading. Turn slice to bread all sides. Lay breaded slice on a platter while you coat the rest of the slices. Lightly spray both sides of the breaded eggplants with Olive Oil Pam Spray. Fill the sir fryer rack with eggplants. Air fry at 390 degrees F, for 15-18 minutes. 4 servings
