Air Fried Eggplant THM FP, DF, SF, GF

Ingredients

  • 1 medium eggplant peeled and sliced 3/4 inch thick
  • Egg wash
  • 2 egg whites
  • 2 tablespoons water
  • Breading:
  • 3 tablespoons THM Nutritional Yeast
  • 1/4 cup THM Baking Blend
  • 1/4 teaspoon garlic powder'
  • 1/4 teaspoon onion powder
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon salt

Instructions

  1. Egg Wash and Breading Prep: Beat the egg whites and water together. Set aside. Combine the breading ingredients together in a shallow bowl. Breading the eggplants: Dip each eggplant slice into the egg wash and then immediately into the breading. Turn slice to bread all sides. Lay breaded slice on a platter while you coat the rest of the slices. Lightly spray both sides of the breaded eggplants with Olive Oil Pam Spray. Fill the sir fryer rack with eggplants. Air fry at 390 degrees F, for 15-18 minutes. 4 servings
