Oreo Cake Roll, THM S, Keto, Sugar-free, Low-carb

Have you ever seen a cake roll in a bakery and wondered if you could make one? These delicious desserts are really not that difficult to make. Let me give you a few hints to making these desserts for your Holiday table!

Oreo Cake Roll…what could be better than a slice of the cake that tastes just like an Oreo cookie! Did you know by changing the cocoa powder to Black Cocoa Powder you can have a cake roll that tastes just like an oreo cookie?

I did not reserve any filling to garnish this Oreo Cake roll. I just dusted the top with a little Gentle Sweet.

Desserts are so much fun to make and of course to eat, too. Cake Rolls take me back in time as a child helping my mother make them for dinner guests that we were hosting.

One of the tricks to getting a nice cake roll is to use a good quality parchment paper and Pam Spray. You want to be able to remove the parchment paper easily and quickly to roll the cake. Be sure and spray the parchment paper well, along the edges, and the complete surface.

Cake rolls may look difficult to make but really they are not that hard. If they don’t get quite right they are still delicious. If rolling the cake seems difficult, cut the cake in equal sections, and you can stack it like a torte.

This cake roll I used regular cocoa powder and filled it with Peanut Butter Filling. I reserve a bit of filling to garnish the top. I cut sugar-free peanut butter cups in 1/4th and placed them on the garnish swirls.

Oreo Cake Roll, THM S, Keto, Sugar-free, Low-carb

  • Cake:
  • 7 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/3 cup Gentle Sweet
  • 1 teaspoon vanilla
  • 3 tablespoons THM Whey Protein Powder
  • 7 tablespoons Black Cocoa Powder for Oreo Flavor or regular cocoa powder for chocolate flavor
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon Xanthan Gum
  • extra Gentle Sweet and Cocoa Powder for dusting tea towel
  • Filling:
  • 8 ounces cream cheese, room temperature
  • 1 1/4 cups whipping cream
  • 2 tablespoons Gentle Sweet
  • 1/4 teaspoon Xanthan Gum
  • optional 1/3 cup sugar-free peanut butter (for peanut butter filling)
  • Cake: Preheat oven to 350 degrees F. Line a 10 x 15 jelly roll pan with parchment paper. Spray heavily with Pam Coconut Oil Spray. Prepare a cotton tea towel by sprinkling it with 1 tablespoon cocoa powder and 2 tablespoons Gentle Sweet. In in mixer bowl, beat egg whites until frothy. Add cream of tartar, Gentle Sweet, and vanilla. Beat until egg whites are glossy and semi-stiff. Sift together THM Protein Powder, Cocoa powder, baking powder, salt, and Xanthan Gum. Fold into beaten egg whites. Beat egg yolks until smooth. Fold into egg white mixture. Spread cake batter over parchment paper. Bake for 8-10 minutes or until cake springs back when you touch. Flip cake upside down on prepared tea towel. Carefully remove the parchment paper. Roll cake and towel up together starting with the narrow end. Allow cake to cool at room temperature. Filling: Whip filling ingredients together until smooth and thickened. Carefully unroll cooled cake. Spread filling over cake reserving 1/2 cup to garnish the top of the cake roll if desired. Roll cake up. Wrap in plastic wrap until ready to serve. Garnish as desired with reserved filling. I used sugar-free Peanut Butter Cups for the one with regular cocoa powder.
  • these cake rolls do freeze very well.

I lina a 10-inch by 15-inch jelly roll pan with parchment paper. Spray it heavily with Pam Olive or Butter Spray. Set aside while you prepare the cake batter.

I spread the cake batter as evenly as I can in the jelly roll pan. While the cake in baking I prepare a cotton dish cloth by dusting it with 1 tablespoon cocoa powder and 1 tablespoon Gentle Sweet. This will keep the cake from sticking to the cloth.

The reason for dusting your cloth with cocoa powder and Gentle Sweet is so the cake doesn’t stick to the cloth. You must roll the cake up while it is still hot. If you wait until it is cooled it will crack when you try to roll it. Roll the cake be starting at the short end.

You may wonder “why” Black Cocoa Powder? Black Cocoa Powder will make your cake roll taste like an Oreo Cookie! If you do not have black cocoa powder you can use regular cocoa powder which will make your cake roll taste like regular chocolate.
