Cookies and Cream Protein Bars — a tasty vanilla base with chocolate crumbles, a oreo cookie layer, and the flavor is just wonderful! I drizzled a little sugar-free chocolate chips over them to dress them up.

I do keep the bars in the fridge wrapped in wax paper in a airtight container. When I leave home I put a few in a small cooler bag along with any drinks I carry with me.

Trim Healthy Mama has a Chocolate Brownie Fix that is absolutely delicious and my husband loves them! These Brownie Fix Bars are a Fuel Pull and I love its chocolate/peanut butter taste. Cookies and Cream Protein Bars THM fp, Keto, GF, SF

  • Black Cocoa Layer:
  • 1/4 cup black cocoa powder
  • 1 tablespoon THM Whey Protein Powder
  • 1 tablespoons THM Gentle Sweet
  • 2 teaspoons oat fiber
  • 1 teaspoon MCT oil
  • 1 teaspoon butter melted
  • 2 teaspoons water
  • Cookies and Cream layer:
  • 1/2 cup THM Cookies and Cream Whey Protein Powder
  • 3 tablespoons Collagen
  • 2 1/2 tablespoons Oat Fiber
  • 2 tablespoons THM Gentle Sweet
  • pinch mineral salt
  • 1/4 teaspoon Glucomannan
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon MCT oil
  • 2 1/2 tablespoons water
  • 1 tablespoon Sugar-free chocolate chips to drizzle over bars

  • In a Food processor bowl or mixer bowl combine the Black Cocoa layer together. It will be crumbly. Pour into a bowl and set aside. In a Food processor bowl or mixer bowl combine Cookies and Cream dry ingredients together. Add extract, MCT oil and 2 tablespoons water. Mix well. Add remaining water if needed to make the mixture like a stiff play dough. Divided Black Cocoa mixture between 6 bar molds. Press crumbles down. Add the Cookies and Cream crumbles over top. Press bars firmly. Refrigerate to harden. Remove from pan. Layer on a platter or cookie sheet. Place chocolate chips in a small plastic bag. Microwave for 10 second intervals until they are melted. Cut a small corner of of the bag and drizzle chocolate over bars. Allow chocolate to set. 6 THM FP Bars
  • If you prefer–you can make a double batch of the Cookies and Cream layer and omit the Black Cocoa Layer for just Cookies and Cream. The Black Cocoa layer gives the bars a great taste.

I use my food processor to make the bars. This works very well. The crumbles press very well into the molds.

I bought this Pampered Chef Bar Maker when a friend was having a party. I love it. It is handy to make all kinds of bars for lunches, etc. There are multiple bar makers you can find in stores and on Amazon. How many bars this recipe makes will depend on the size of your bar maker.

I put 1 tablespoon of chocolate chips in a small plastic bag. I melted them in the microwave at 10 second intervals. I snipped the corner off the bag and drizzled the chocolate over the bars.

  4. What can I do to make these firmer and dryer? Mine look like tar bars of goop. I tried to reform them with my hands into balls and press again. They are so sticky. I must have done something wrong. My guys like the taste but I need a dryer/firmer consistency to become bars.

  5. I found the bottom layer/Black Cocoa too dry, like powder. I added another squirt of MCT oil and 2 more teaspoons of melted butter but it still wasn’t enough to make it stick together. Should I use more butter? This is SOOO Delicious!!!! I want to triple it so I can make it in a 9×13 inch pan! ROTFL! <3

    • Same here! I did add a bit more water & oil to the bottom layer. I doubled the recipe but it wasn’t enough for a 9×13 so I would try triple or quadruple next time. I made it with chocolate-peanut protein powder and it was super yummy!
