Banana bread has been an old-time favorite quick bread. Add some grated pears and it gives it an even better flavor and texture. Serve this bread with some freshly made butter and you have a winner!!

This recipe was created with the thought of using extra unfed/discard starter that you may have on hand. I used sprouted and oat flour so that it can be baked immediately after mixing.
This moist Banana Pear Bread is a THM Crossover since it includes both fats and carbs. I love to spread it with just a bit of butter for a delicious treat.
The banana can be very ripe as it gets blended with the other liquids. I was gifted quite a number of Bosc Pears and they are delicious in this bread. If you wanted to use all bananas..you can use 3 large bananas and omit the pears.
Banana Pear Sourdough Bread THM XO, Sugar-free
- 1 1/4 cups sprouted flour
- 1/2 cup oat flour
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup Brown Sugar Sweetener Substitute or Gentle Sweet
- 1/2 cup butter, room temperature
- 3 eggs, room temperature
- 1 tablespoon vanilla
- 1/2 teaspoon Banana Extract
- 3/4 cup sourdough starter, unfed/discard is ok
- 1 banana
- 2 pears, peeled, cored, and grated
- Preheat oven to 350 degrees, Combine the flours, salt, baking soda, baking powder, and sweetener together in a bowl. Set aside. Blender together butter, eggs, vanilla, banana extract, starter, and banana until smooth. Grate the pears fine. Add the grated pears and liquid mixture to the dry ingredients. Fold the ingredients together until just incorporated. Pour into a well-greased bread pan. Place bread pan into the oven. Bake for 65 minutes or until toothpick inserted into the center comes out clean. 12 slices.

I grate the peeled pears really fine with an old-fashioned metal grater that I have.

The wet and dry ingredients are carefully combined by mixing lightly, just until the they are incorporated together.

Doesn’t this loaf of bread look wonderful. The top gets a little crusty and the center is so moist.

I would love to make this but I don’t have sprouted flour. Do you think the mixture could be fermented for 7 hours on the bench before cooking.
I have never tried it that way.
Did you try it that way? If so, how did it turn out?
