Soft, chewy cookies are always a treat, especially with a cup of coffee. These Chocolate Mint Chip cookies have a great chocolate flavor with the cool burst of peppermint. If you want the taste of a Thin Mint Cookie with the texture of chunky chocolate chip cookies, this one’s for you.

I was delighted to find ChocZero Peppermint White Chocolate Chips that are sugar-free with a wonderful peppermint flavor. If you haven’t tried them you must. They give the perfect burst of peppermint to these cookies.

A few baking utensils I use when baking cookies is a cookie scoop and parchment paper. These two items make baking cookies a breeze. You can slide the parchment paper onto your baking rack to cool without removing the cookies. That is so efficient and a big plus if you have children helping you bake. They will not burn themselves when they remove the cookies for you.
I love to keep a few baked items in my freezer for a quick sweet treat when I need one. Cookies always freeze very well and are good frozen, too.
Chocolate Mint Chip Cookies THM S, Keto, Gluten Free, Sugar-free
- 1/2 cup butter, softened
- 3 eggs, room temperature
- 1/2 cup Brown Sugar Sweetener or THM Gentle Sweet
- 1 teaspoon vanilla
- 1/3 cup cocoa powder
- 2/3 cup THM Baking Blend*
- 2 tablespoons Almond flour
- 1/2 teaspoon xanthan gum
- 2 teaspoons baking powder
- pinch of salt
- 1/4 cup ChocZero Peppermint Chocolate Chips
- Preheat oven to 350 degrees F. In a mixer bowl, combine butter, eggs, sweetener, and vanilla. Mix well. Add cocoa powder, Baking Blend Almond flour, xanthan gum, baking powder, and salt. Mix well. Stir in mint chocolate chips. Scoop on a parchment lined cookie sheet. Bake for 7-8 minutes Cookie will appear under-baked but will set up as they cool. 24 cookies

I think I’ve thoroughly read the page twice.now and this recipe is only for people who buy whatever THM is. Correct? Without it, the recipe is missing 2/3 of a cup of something and I don’t think anywhere on the page you let people know what can be substituted in place of it. Did I miss that part? I want to try this but it looks like I’m screwed. Thanks for nothing.
THMM Baking blend is a mix of almond flour, oat fiber, ect. It is lower in calories than almond flour. You can replace it with all almond flour. I will add that edit to the recipe.
Replace with all almond flour? Will do. I’m not into needing to order specialty ingredients, prefer working with just what my local grocery stores offer. I’m very tight on money anyway and couldn’t afford anything ordered. I appreciate your response and I’ll comment again after I try this recipe!!
