Peanut Butter Angel Food Cake, THM FP, SF, DF, GF, Low-carb

Angel Food Cakes are a delicious fluffy light dessert to add to any meal. I love to bake and these cakes are so easy! This Peanut Butter Angel Food cake uses defatted peanut flour instead of regular wheat flour. Which makes it a Fuel Pull even with the frosting. Try this delicious dessert and see what you think of it!!

A few things to remember when beating egg whites. You need to have grease-free bowls and beaters or you will not get the volume you want. Room temperature eggs will whip the best and fluffiest.

Peanut Butter Angel Food Cake THM FP, SF, DF, GF, Low-carb

  • Angel Food Cake:
  • 2 cups egg whites, room temperature
  • 1 1/2 teaspoons cream of tartar
  • 2/3 cup Gentle Sweet, divided
  • 1 teaspoon THM Peanut Butter Extract
  • 1 teaspoon THM Vanilla Extract
  • 2/3 cup THM Peanut Flour
  • 2 tablespoons Whey Protein Powder
  • 1/3 cup THM Oat Fiber
  • Frosting:
  • 1/4 cup cocoa powder
  • 3 tablespoons THM Peanut Flour
  • 1/4 cup THM Gentle Sweet
  • 1/2 teaspoon vanilla
  • 4-5 tablespoons almond milk
  • 1 tablespoon EACH White and Dark Bake Believe Chocolate Chips
  • 1 teaspoon chopped peanuts, optional
  • Preheat oven to 350 degrees. In a grease free mixer bowl beat egg whites until frothy. Add Cream of Tartar. Whip until semi-soft peaks form. Add 1/3 cup Gentle Sweet and extracts. Whip for 1 minute. In a separate bowl combine remaining Gentle Sweet, THM Peanut Flour, Whey Protein Powder, and Oat Fiber . Carefully fold into beaten egg whites. Spoon cake batter into an angel food cake pan. Swirl knife through batter to remove air pockets. Bake cake on the lowest oven rack for 45-50 minutes. Remove from oven and turn cake upside down to cool completely. After cake is completely cooled…take a long knife and cut around the pan and the center. Flip cake onto a serving platter. Combine frosting ingredients adding just a bit more almond milk if needed to be able to spread frosting on cake. Frost top of cake. Sprinkle chocolate chips on the top of the cake. 12-14 servings.

For a dairy free cake omit the white chocolate chips. The dark and milk chocolate chips do not have dairy in them. Bake Believe Chocolate Chips can be found at most Walmart stores. Check the store locator on their web page to find the nearest store that carries their products.

Beat egg whites until frothy before adding Cream of Tartar.
When egg whites are semi-soft add sweetener.

You can over-beat egg whites causing them to collapse when baking. What you want is soft mounds that will hold their shape. Cream of Tartar is an important stabilizer when making anything with whipped egg whites. Do not omit it.

This cake does not rise as high as my regular angel food cake due to the fat in the peanut flour. It will still gives a very nice fluffy cake.

I enjoy making Angel Food cakes and the Strawberry Angel Food Cake pictured above is a favorite of my family. Within an hour of taking this picture the cake was all. Too many hungry men at my house!!!

Maple Walnut Angel Food Cake reminds me of the cake my grandmother made many years ago. However this on is sugar-free and low carb.
