Bumbleberry Cobbler THM-E

Have you ever heard of a Bumbleberry? While there is not an actual fruit call Bumbleberry; this name is given to a mixture of fruit baked in a cobbler or pie. This mixed fruit cobbler features apples, rhubarb , blueberries, and strawberries. A biscuit style crust tops the fruit. This delicious cobbler serves 1 person for a main dish or 2 as a dessert.

I will freeze fruit including apples to use for winter baking. All fruit can be frozen raw without blanching like you need to do with veggies. Rhubarb and apples can be diced and frozen in quart bags.

Bumbleberry Cobbler THM-E

  • Fruit:
  • 3/4 cup diced apples
  • 1/3 cup blueberries
  • 1/4 cup rhubarb
  • 2 strawberries, diced
  • 1 tablespoon THM Gentle Sweet
  • Cobbler batter:
  • 1 egg white
  • 2 tablespoons Nonfat Greek Yogurt
  • 3 tablespoons water
  • 1/8 teaspoon THM Butter Extract
  • 2 tablespoon oat flour
  • 1 teaspoon THM Gentle Sweet
  • 2 tablespoons THM Baking Blend
  • 1/2 teaspoon baking powder
  • Preheat oven to 350 degrees. Combine fruit with Gentle Sweet . Pour fruit into a 6 inch baking dish. Blend together egg white, yogurt, water, and butter extract until smooth. Set aside. Combine oat flour, Gentle Sweet, Baking Blend , and baking powder. Stir wet ingredients into dry just until combined. Spoon over fruit mixture. Bake for 20-25 minutes. Serve warm with nonfat Greek Yogurt. Serves 2.
Diced fruit for the Bumbleberry Cobbler
The fruit can be slightly mounded in the dish. It will shrink as it bakes. It will Waiting for the cobbler batter.
Ready for the oven.
