What is better with a hot cup of tea/coffee than a scone! And who is going to argue with a Triple Chocolate Scone!! These fudgy scones combine 3 types of chocolate to please your taste buds. Pair this with your morning coffee and you will have a delightful treat.

These scones freeze very well. I, individually wrap each scone, stack in a Tupperware Container, and place into the freezer. They will keep indefinitely when stored in the freezer. Using all Almond Flour gives a very high calorie scone. By using THM Baking Blend and cocoa powder you can reduce the calories but still have a great tasting fudgy scone. You can reheat these scones briefly in the microwave but they do not reheat well in an oven due to the ganache melting.

Triple Chocolate Scones THM-S, Keto, Dairy-free Option
- 2/3 cup THM Baking Blend
- 2/3 cup Almond Flour
- 1/2 cup cocoa powder
- 1/2 cup THM Gentle Sweet
- 2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon Espresso Powder, optional
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1/4 cup melted butter
- 2 tablespoons water
- 1/4 cup Bake Believe Dark Chocolate Chips
- 1 tablespoon Bake Believe White Chocolate Chips
- Ganache:
- 1 tablespoon heavy whipping cream
- 1 tablespoon Bake Believe Dark Chocolate Chips
- Preheat oven to 325 degrees. In a mixing bowl combine THM Baking Blend, Almond Flour, cocoa powder, THM Gentle Sweet, baking powder, baking soda, and Espresso Powder. Set aside. In a separate bowl blend together eggs, vanilla, butter, and water. Stir wet ingredients into dry ingredients. Add Dark Chocolate chips and knead into a ball. Divide dough into two. On parchment paper covered cookie sheet, shape each piece into a 7 inch circle 3/4 inch thick. Cut each circle into 6 scones. Move each scone about 1/2 inch apart. Bake for 10-12* minutes. Remove the scones from the oven. Press the White Chocolate Chips on the top of each scone. Allow scones to cool for 1 hour. For Ganache: Heat cream until just about boiling. Pour over chocolate chips. Let set for 2 minutes. Stir until smooth. Pipe over scones. 12 scones.
- *The scones will appear soft but will set up. If you bake them too long they will be dry.
- Bake Believe Chocolate Chips can be purchased at Walmart. Check out their Facebook Page. The white Chocolate Chips have a lower melting point so that is the reason they are only added after the scones are baked.
- Lily’s Chocolate Chips and THM Chocolate Chips maybe used in this recipe.
- Dairy Free option: Replace the butter with coconut oil, use THM Chocolate Chips, and use coconut cream instead of cream to make the ganache.
