The taste of fall…pumpkin cheesecake with chocolate chips. This smooth creamy cheesecake is full of pumpkin flavor and the richness of milk chocolate chips. You can adjust the cinnamon amount or even use pumpkin pie spice if you prefer.

I love all kinds of cheesecakes. It would be hard for me to pick out a favorite. There are so many different flavors, additions you can add, and they all pair so well with the creamy cream cheese filling. There are quite a number of cheesecake recipes on my blog. Use this link…Recipes to see if there are any kinds you would love to try.
I have found that a cheesecake baked at a lower temperature of 300 degrees F. creates a moist creamy cheesecake. After I turn the oven off I crack the the oven door open just a bit with the cheesecake still in it. The heat will finish the baking the center and the cheesecake will not crack. Remove the cheesecake after it has cooled for 1 hour.

Blend the cottage cheese and pumpkin puree together until smooth.

In a mixer bowl, mix cream cheese and blended mixer together until smooth. Add sweetener, Vanilla extract, cinnamon, and salt. Mix well. Add eggs one at a time, mixing lightly between each addition. Stir in chocolate chips. Pour cheesecake batter over the crust and smooth.

Reduce the oven temperature to 300 degrees. Place a pan of water on the bottom rack of the oven. Place the cheesecake directly above the pan of water. Bake for 50-55 minutes.

Turn oven off and crack the door open. Cool for 1 hour in the oven then remove the cheesecake.
This smooth creamy cheesecake had a secret ingredient, cottage cheese. Cottage cheese when blended smooth can be used to replace cream cheese. It is best to blend the cottage cheese smooth before mixing it into the cheesecake batter. This will add more protein and less fat to the cheesecake.
