Creamy clam chowder is juts the perfect dish on a cold dreary day. Pair it with a crusty loaf of sourdough bread and you have the perfect meal.

This chowder brings back memories of times spent clamming with my family. We would spend hours in at the shore; my dad fishing and my mom clamming with whoever wanted to help her. This hearty chowder is still a favorite with my father.
Have you tried Yukon Gold potatoes? These waxy potatoes have a lower glyecemic index and will not elevate your blood sugar like the russet potatoes do. I love to plant Yukon Gold and Huckleberry Gold potatoes in my garden.
Our family prefers a thickened chowder but some people do not. If you do not, omit the oat flour.

New England Clam Chowder, THME, GF, SF
- 1 slice turkey bacon
- 1/3 cup chopped onions
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 2 cups chicken broth, divided
- 1 cup diced yellow potatoes
- 5-ounce can baby clams
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup fat-free cottage cheese
- 2 cups almond milk or water
- 3-4 tablespoons oat flour
- In a 4-quart stockpot, fry the bacon. Remove the bacon and crumble. Set aside. Add the onion, carrots, celery, and 1/4 cup broth to the stockpot. Simmer until onions are translucent. In a sperate pot, sook potatoes in the remaining broth until soft. Add cooked potatoes with the broth to the veggie mixture. Add undrained clams, salt, and pepper. Blend the cottage cheese, milk/water, and oat flour together until smooth. Add blended mixture slowly into the stockpot, stirring continually. Simmer gently until slightly thickened. Garnish each serving with reserved bacon. Serve with crusty bread. Serves 4.
