Gluten-free Sourdough Waffles

Do you need a gluten-free diet and want tasty food? Try this sourdough waffle recipe. You will be surprise at the great taste, flavor, and texture of these gluten-free sourdough waffles.

In my search to find a tasty alternative to wheat flour items, I began to combine gluten-free flours to make a flour mix that is not just starches such as potato/tapioca starch. This one uses gluten/free whole grains which I use to feed the starter and it uses in the batter.

I do find that gluten-free sourdough starter is a little more watery than regular sourdough starter. I do have a limited amount of gluten-free starter available to purchase in my blog store. Yes, I do know that there could be a trace of gluten in my starter since I also bake with wheat flour for other family members. My son who is very sensitive to gluten can eat the gluten-free food I prepare since we are very careful with cross contamination.

Gluten-free Sourdough Waffles

  • 1 cup water
  • 1/2 cup gluten-free sourdough starter
  • 1 1/4 cups gluten-free flour mix*
  • 2 eggs, separated
  • 1/4 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Fermenting: In a bowl combine, water, sourdough starter, and gluten-free flour. Mix well. Allow this batter to set at room temperature for 7 hours OR refrigerate for 24 hours.
  • Mixing the batter: Separate eggs. Add egg yolks to the fermented batter along with the xanthan gum, baking powder, baking soda, and salt. Mix well. Beat egg whites until stiff. Fold into batter.
  • Frying: Lightly grease a waffle iron. Use 1/4 cup fill each waffle indentation. Fry following manufactures instructions. 16 waffles

This waffle iron was a gift from my daughter-in-law. I love it. It makes 4 waffles at a time.

These waffles are so tasty. I made my husband an egg sandwich and he never knew they were gluten-free.
