Eggs are our favorite breakfast foods. As a young child, my mother often made Egg-in-the-Nest for us. These were made with a slice of bread and an egg. This recipe give a different twist to that old time favorite with a version that is gluten-free and tastes wonderful!

One vegetable that always finds a spot in my garden is spaghetti squash. I love this squash because it is so tasty and compliments any sauce you put with it. This past year I planted the plants near the fence so that they can climb which makes very easy picking. These squash do store well in a cool dry place for a few months.

Eggs in a Nest, THM S, DS, SF, GF

  • 1 small/medium spaghetti squash
  • 2 tablespoons butter or olive oil for dairy free
  • 6 eggs
  • salt, pepper, and Nutritional yeast
  • hot sauce, optional
  • Wash the spaghetti squash and cut it into 3/4 inch rings. Clean the seeds/membranes out of each ring. Lightly spray your cast iron frying pan with butter/olive oil. Heat over medium heat. Lay the spaghetti squash rings in the pan. Fry for 3-4 minutes or until lightly browned. Turn each ring and fry for an additional 3 minutes. Carefully break an egg into each ring. Season with salt, pepper, and nutritional yeast. Reduce the heat to low and cover the frying pan with a lid. When the egg whites are set or the eggs are fried to your liking, remove the rings to a serving platter. 3 servings.
  • You can multiply this recipe as many times as you need to serve your family.

Our family learned to enjoy different veggies since our son, Jordan, had a very restricted diet. You can read about it on this post. Spaghetti Squash plants always find a place in my garden. These squash are a good source of fibervitamin Cmagnesium, and potassium; and it is a source of vitamin A.

I took a medium spaghetti squash and cut it into 3/4 inch rings. I cleaned the seeds/membranes out of each ring. Lightly spray your cast iron frying pan with butter/olive oil. Heat over medium heat. Lay the spaghetti squash rings in the pan. Fry for 3-4 minutes or until lightly browned as shown below.

Turn each ring and fry for 3 minutes. Carefully break an egg into each ring. Reduce the heat to low and cover the frying pan with a lid.

When the egg whites are set or the eggs are fried to your liking, remove the rings to a serving platter. You can multiply this recipe as many times as you need to serve your family.
