Curried Butternut Bisque THM E, Dairy-free option, Gluten-free

Fall brings with it a harvest of winter squash and pumpkins. One of our favorite winter squash is the humble butternut squash. We love these roasted and eaten with butter and salt like a potato and if you have any leftover they can be made into this delicious bisque. This bisque is the perfect bend of sweet and spice for cool fall weather.

Our family learned to enjoy different veggies since our son, Jordan, had a very restricted diet. You can read about it on this post. Butternut Squash became a favorite of ours with its deep orange flesh and rich pumpkin flavor. These squash are a good source of fibervitamin Cmagnesium, and potassium; and it is a source of vitamin A.

My family gifted me a Vitamix Blender for Christmas. I used this to blend the ingredients together until smooth. Be very careful when using a blender with hot ingredients. I removed the center insert on my blender lid so that steam could escape while blending. I laid a small kitchen towel over the lid to catch any splatters. This worked very well.

Curried Butternut Bisque THM E, Dairy-free option, Gluten-free

  • 6 cups peeled and cubed butternut squash or 4 1/2 cups cooked/roasted squash
  • 3 cups fat-free chicken broth
  • 3 garlic cloves
  • 1/2 cup diced onion
  • 1 tablespoon curry powder
  • 2 tablespoons Brown Sugar Sweetener Substitute or Swerve Brown Sweetener
  • 1 teaspoon salt
  • 1/2 teaspoon Green Hatch Chili powder
  • 4 Laughing Cow Cheese wedges or for dairy-free 1/4 cup cashew cream cheese
  • Ina 6 quart kettle, cook squash, garlic, and onion in the chicken broth until tender*. Allow to cool.. Blend the squash mixture, spices, and Laughing Cow Cheese Wedges until smooth using an immersion blender or a regular blender. If using a blender, be very careful to vent the blender properly. Pour bisque into the kettle over low/medium heat until thoroughly heated. 5 1 1/2-cups servings.
  • *if you are using cooked/roasted squash, cook the onion and garlic in 1 cup chicken broth until soft. Blend cooked squash, chicken broth with onions and garlic, remaining chicken broth, spices, and cheese wedges together. Pour bisque into the kettle over low/medium heat until thoroughly heated.
  • I often serve this bisque with sourdough/sprouted bread products. The bread will make your meal and E because bread is a carb source.
  • You can have 1/2 cup butternut squash for a FP or S serving.

Here is the bisque blended with my Vitamix Blender. It does a wonderful job blending it smooth and creamy. I love my Vitamix Blender because it blends everything so well.

As you can see, this bisque is creamy and smooth. I just love the sweet and the added spice form the Green Hatch Chilies. You can add regular chili powder of you prefer that.

Curried Butternut Squash Bisque, THM E, DF option

Ingredients
