Blueberries….are one of the easiest berries to take care of. When we purchased this property there were 6 blueberry bushes along the woods. I do have to compete with the birds some years especially when it is dry. My blueberry bushes provide me with gallons of fruit with very minimal care. There isn’t any peeling or pitting, just pick the berries and eat them!!!

Blue berries have a lot of health benefits. They contain a plant compound called anthocyanin which gives them their blue color and many health benefits. They are all high in Vitamin C.

I have used Clear Jel for many years to thicken pie fillings. This product is not on-plan per Trim Healthy Momma but I do use it as it is a type of resistant starch. Thermflo appears to be the best in resistant starch in this kind of thickeners. These thickeners are a type of waxy maize heat modified starch with is used for some medical conditions to keep their blood sugars stable for hours.
Blueberry Pie Filling to Can, Sugar-free
- 8 cups water
- 1 1/2 cups Gentle Sweet
- 1 teaspoon salt
- 2 cups cold water
- 2 cups Clear Jel or Thermflo
- 16 cups blueberries
- 5 tablespoons lemon juice
- 11 wide mouth pint jars, with lids and rings
- In a large stock pot combine water, Gentle Sweet, and salt. Bring the mixture to a boil over medium high heat. In a 4 cup measuring cup combine 2 cups cold water and 2 cups Clear Jel. When the contents of the stockpots comes to a boil, slowly pour in the Clear Jel/water mixture, whisking continuously. Reduce heat and cook until the filling is clear. Remove filling from heat. Stir in fresh or frozen blueberries and lemon juice. Fill jars with filling to the neck of the jar. Wipe the top of the jar rim clean with a cloth. Add lids and rings. Place jars into a prepared Waterbath canner. Water should be at least 1 inch over the top of the jars. Bring water to a boil. Simmer gently for 30 minutes. Remove jar from canner and allow to cool for 24 hours. Check seal. Remove rings. Wash jars and store in a cool place. 11 pints

This is how thick the filling will get after you cook it with the Clear Jel in it. I added a few blueberries before I remembered to take a picture. Below you will see how the filling looks after all the blueberries are added.

Blueberry Pie Filling will get thinner after it has been canned. If you want it a little thicker for a pie so the pieces hold their shape better, add 2 teaspoons unflavored gelatin to a quart of filling when you make a pie. That works wonders.

This pie was made with Sourdough Pie Crust and canned Blueberry Filling. It was so delicious! This is one of the reasons I like to keep canned pie filling on hand…..it makes a quick dessert. This pie plate is an old aluminum one from my grandma. I love using it for something special!

Hey Glenda. I love your recipe book, and thank you for teaching us how to make all things sourdough!! I have a question about your pie. I noticed you are canning in pints…….when I make a pie I have to use a quart of filling AT LEAST. Sometimes more….. how about you?
