Sprouted Flour Egg Noodles, THM E, DF, SF

Homemade egg noodles are a Mennonite/German tradition. As a young girl my introduction into making noodles was by my grandmother and later on my mother-in-law. I still have my mother-in-law’s Atlas noodle maker and it has made many, many noodles.

Sprouted Flour is grain that has been sprouted, dried, and then ground into flour. Sprouting helps make the grain so that your body can digest it better. It also unlocks the nutrients and gives you a greater health benefit. Many people with diabetes can use sprouted flour without causing their blood sugar to spike.

Even though I use egg yolks in these noodles, they will still fall under a THM E/carbs category. There is 12 2/3-cup servings in this recipe. That will be 3 grams of fat per serving.

Sprouted Flour Egg Noodles, THM E, DF, SF

  • 4 cups sprouted wheat flour
  • 6 egg yolks or 1/2 cup egg yolks
  • 1/2 cup plus 3 tablespoons water
  • In a mixer bowl, put the sprouted flour. Blend the egg yolks and 1/2 cup water together. Pour over the flour. Mix well. If the dough doesn’t cling together, add 1 tablespoon water at a time, mixing well after each addition. Wrap the dough in saran wrap. Allow to set for 1 hour. This allows the dough to fully absorb the flour and it will soften somewhat. Divide the dough into egg size pieces. With the noodle maker on #1 roll the dough through a few times until it is smooth. Lay on a cloth or hang on a drying rack. Repeat until all the dough its put through at thickness 1. Turn the dial to #5 or #6 (depending how thick you want the noodles) and put all pieces through again. Hang on a drying rack for 30 minutes. Cut to the desired width. Lay noodles on a baking sheet to dry. I will let them dry for up to 48 hours to be sure they are completely dry. I like to air dry them so that I can store them in my pantry.
  • To aid in drying…use a fan turned on high blowing over the pasta to dry them quickly.
  • After I place the dried noodles in a container, I keep the lid off for a few days so if they aren’t quite dry they will continue to dry.
  • If you have a lot of egg yolks you can add 1 cup egg yolks and 1/3 cup water. This will make the noodles a THM XO.

This is how the sheets of dough looked after I put them through number 6 on my noodle maker. I allowed them to dry and then put them through the cutter side.

Here are the noodles after they had dried 24 hours with a fan blowing over them. They are totally dry and ready to be stored.
