Buttered Noodles with Saffron, THM S

If you have ever been in any Mennonite or Amish home for a meal you will understand the necessity (they think) of serving Buttered Noodles along with mashed potatoes! Their Pennsylvania Dutch background just loves the carbs and starches. Serving these two together at a meal is a must. Most times this dish is prepared using homemade egg noodles with lots of browned butter. My family loves noodles so I have modified this recipe. It continues to be a favorite, though I almost never serve it along side of mashed potatoes!

Dreamfield pasta is made with a special fiber coating so that your body digest it differently. This may vary from person to person but most people will not see a glucose spike when eating this pasta.

You may wonder what is browned butter! Did you know that if you melt butter in a skillet a over medium heat and continuing to cook it after it has melted; it will turn a golden brown color. This gives the noodles a wonderful taste.

Buttered Noodles with Saffron, THM S

  • 5 cups fat-free chicken broth
  • 1/4 teaspoon saffron strands
  • 1 1/2 teaspoons salt
  • 1 box Dreamfield Linguine, uncooked
  • 3 tablespoons butter
  • 1 1/2 tablespoons crushed Wasa Crackers or pecan meal
  • Bring broth, saffron, and salt to a boil in a 3 quart kettle. Add Dreamfield Pasta. Cook for 6 minutes. Remove from heat. Drain. In a skillet, melt butter. Cook until golden brown. Add crushed wasa crackers OR pecan meal. Place noodles in a serving dish. Spoon buttered crumbs over noodles. Serves 8-10.

Saffron is an expensive spice which is from crocus-like flowers. You can pick 3 strands from each flower. There are 463 strands of saffron in a gram so you can see it is a labor intensive crop. I have already grown saffron and it is so much fun. It flowers in the fall, usually in October. My supply of saffron comes from Nepal. My nephew is a missionary and by purchasing it form him I am able to help support him an his fellow workers.

Ingredients

  • 5 cups fat-free chicken broth
