White Chocolate No-bake Mini Cheesecakes THM S, Keto, Sugar-free, Low Carb

Who doesn’t like desserts!! And chocolate and cheesecake together, what could be better! These No-bake White Chocolate Cheesecakes are easy to make. Best of all, they only takes a few ingredients. You can dress this dessert up by serving it in fancy chocolate shells or you can serve it in a simple glass dish. These creamy cheesecakes will fool everyone in believing they full of sugar when they are not. Why not make these for your Mother’s day dessert!

No-bake Cheesecakes have always been a favorite of mine to make. They are very easy to make sugar-free and still taste like a regular cheesecake. You can pipe the filling into little chocolate shells, 4-ounce jars or cupcake liners. The sky’s the limit when it comes to garnishes. I used fresh berries and ChocZero Strawberry syrup to garnish these cheesecakes.

ChocZero items are sugar-free, Keto, and are a personal choice for THM due to the soluble corn fiber. I use these item occasionally.

White Chocolate No-bake Mini Cheesecakes THM S, Keto, Sugar-free, Low Carb

  • Chocolate Shells:
  • 1 1/4 cups Chocolate chips, sugar-free
  • Filling:
  • 1 1/4 cups Bake Believe White Chocolate Chips or ChocZero White Baking Chips
  • 1 1/3 cups heavy whipping cream
  • 1/4 teaspoon THM Stevia or THM Gentle Sweet
  • 12 ounces cream cheese, softened
  • 1 teaspoon vanilla
  • 1/2 teaspoon xanthan gum
  • Garnishes:
  • ChocZero Strawberry Syrup
  • Strawberries
  • Chocolate Shells: Cover the bottom of a cupcake pan with saran wrap or use small 6-ounce Pyrex cups. Place prepared pan/cups in the freezer. Place chocolate chips in a glass measuring bowl. Microwave at 15 second intervals, stirring each time until melted. Fill a small ziploc bag with the melted chocolate. Snip one corner of the bag off. Remove prepared cups from the freezer. Pipe chocolate over the cups to make a shell. Place pan/cups in fridge to harden. *the white chocolate chips are soften and much harder to make a nice shell…they break very easily. You can tuck the broken pieces against the cheesecake after you are finished piping it in each shell.
  • Filling: Place Bake Believe Chocolate chips in a glass measuring cup. Heat 1/3 cup cream until almost boiling. Pour over white chocolate chips. Allow to set for 3-4 minutes. Stir until smooth. Set aside. In a mixture bowl; beat sweetener and cream cheese together. Add melted chocolate chips. Beat well. Add remaining cream and xanthan gum. Whip until fluffy. Carefully remove chocolate shells from saran wrap. Place on a serving platter. With a decorating tube pipe filling into the prepared shells or small serving dishes. Garnish with ChocZero Strawberry Syrup and fresh berries. 8 small desserts or 6 large.

There are a few sugar-free chocolate chips available online and in supermarkets. Bake Believe, Lily’s, and ChocZero are the few that I use. ChocZero does have soluble fiber in there chocolate chips which makes them a personal choice item.

If I dont’ have time to make chocolate shells….I just pipe the cheesecake into small serving dishes. It is still delicious and looks lovely.

The chocolate shells are more durable than the white chocolate. If a few pieces break off you can press them along the sides and the cheesecake filling will hold it in place. These cheesecakes are waiting to be garnished!
